Two Minute Hawaiian Pie


Okay you know what is coming today, Hawaiian dessert.  I think this is actually what started the Hawaiian themed dinner last week.  I saw this recipe in an email and needed a good excuse to make it.  2 minutes is probably a stretch because it was one of the easiest pie I have ever made.  If you close your eyes you can imagine yourself sitting on the beach with a nice tropical breeze blowing.

You can toast the coconut if you like.
This is a shortbread crust.
Start with 20 oz of crushed pineapple.  Do not drain.
Add a 6 serving box of vanilla pudding mix.
1 cup sour cream
Whisk that together well.
Then pour into the shortbread pie crust.  You could use graham cracker if you like it better.
Drain the pineapple rings well.  This was a small can. How many of you have ever made a pineapple sandwich with these rings?
I cut the rings in half and placed them around the top of the pie.  You can use them for lines to cut the pie.
Then put a whole maraschino cherry in the center of the pineapple.  You could cut them in half but why not live a little and use the whole cherry.
Then sprinkle the top of the pie with shredded coconut. Place in the fridge to chill at least 2 hours.

1 20 oz can crushed pineapple undrained
6 serving size box of vanilla pudding
8 oz- 1 cup sour cream
1 9 inch shortbread crust
1 8 oz can pineapple rings
maraschino cherries
coconut
