Ham and Potatoes Casserole

Today's recipe is the ultimate in comfort food.  It has all of your favorite things like cheese, potatoes, and ham.  It's yummy.

Look at all that yummy goodness.
It doesn't take much to make this recipe.
Start with 4 Tablespoons butter and a chopped onion.
Melt the butter in a saucepan and saute the onions.
After the onions have cooked for a while add 1/3 cup all purpose flour and 3 cups milk.  I used 2% milk.
Add the flour and stir well.
Add the milk.  Cook until sauce is thickened and bubbly.  This takes 4 to 5 minutes.  Add salt and pepper.
Thinly slice potatoes and put a layer in the bottom of a casserole dish.
Add some chopped ham on top of the potatoes.
Grate 2 cups sharp cheese
Add the cheese to the milk mixture.
Stir until the cheese is melted.
Add some of the sauce on top of the ham.
Add another layer of potatoes.
And ham.
Pour more of the sauce on top.
And because I didn't think it had enough cheese I added cheese on top. Place in a preheated 350 oven.  Bake covered for 45 minutes, then take the foil off and bake for an additional 30 minutes.  Check it at the end of 30 minutes because if the potatoes are cut a little thicker it might need to cook longer.
I wish I had some of this casserole right now.
Add some green beans and you have a really great meal.

Ham and Potatoes Casserole Recipe

4 Tablespoons butter
1 onion chopped
1/3 cup all purpose flour
3 cups milk
salt and pepper
2 cups cheese grated
2 pounds potatoes sliced very thinly
1 pound ham

Preheat oven 350.  Bake covered for 45 minutes and then 30 uncovered.
