Parmesan Butternut Squash

I really like trying new recipes with butternut squash.  It is a great fall vegetable.  The only problem I have with this squash is how hard it is to peel.  Now it isn't as hard as an acorn squash but you have to work really hard on it.  But it is worth it in the end. This is a great side dish to pork.
 It is a nice crunchy dish.
It doesn't take much.  I do recommend using fresh Parmesan cheese instead of the green can kind.
Time to cut the squash and get the seeds out.
Peel it and then cut into cubes.
Place in a microwave safe dish.
Add 2 Tablespoons water to the squash.
Cover and microwave on High for 15-17 minutes.  Drain the water off.
While the squash is cooking mix the topping.  1/2 cup panko
1/2 cup freshly grated Parmesan cheese.
Carefully remove the pan from the microwave.
It is all nice and soft now.
I probably could have used the same dish but I transferred it so I could get all the moisture out of it. Add the topping and place under the broiler for just a couple of minutes.  Keep an eye on it because you don't want it to get too brown.
Nice and hot from the oven.
It is a nice side dish to pork chops.

Parmesan Butternut Squash Recipe

1 medium butternut squash, peeled and cubed
2 Tablespoons water
1/2 cup panko bread crumbs
1/2 cup grated Parmesan cheese
salt and pepper

Cook on High in the microwave for 15-17 minutes
