Several weeks ago while we were moving back in I wanted to make something for us for lunch that would stick-to-our-ribs but be easy to make. I didn't want to go to the old standby of the ham sandwiches with the great sauce so I found this recipe. It was still ham but a little different.
They were gone so fast I didn't even get a picture of the finished product. You can use the Hawaiian rolls or your favorite small rolls.
Start by putting 1/4 cup of olive oil in a jelly roll pan. Place the pan in the oven while it is preheating to 400. You want the pan to get hot. Be careful taking the pan back out of the oven. There is hot oil rolling around.
Just a light layer on the bottom.
So while the oil is heating, take the bread out. I got the mini sub rolls. Cut them in half.
On the bottom half put one layer of ham.
Then a layer of pork. I bought some pork in the deli but if you had some left over pork loin or something like that you could use that.
Then top with Swiss cheese.
Then put chopped dill pickles on top.
On the top half place a layer of mustard.
Put the top on the sandwich and place in the pan with hot oil. Now this is the fun part. You need to put something on top that is heavy to smash the sandwiches. I chose my cast iron skillets. Put in the oven and bake for about 15 minutes or until cheese melts and the bread is crisp.
I put a little oil in the skillets to use this time to season them some. The bottom of the sandwiches will be nice and crusty. These sandwiches are good for something different. The pork and pickles are the main differences.
