Sausage and Potato Bake

I like trying recipes that use smoked sausage.  They are usually very easy to throw together and include things that I have on hand.  This one did not disappoint.
I like using the colored bell peppers because they are a little bit sweeter than the green ones. They also add a little burst of color too.
Slice one medium onion.
Slice one package of smoked sausage
Cut into chunks two bell peppers, one green and one colored one.
Cut into chunks about 6 cups potatoes.  The recipe calls for red potatoes and I only had Yukon golds and it turned out alright.
Place the potatoes in a pot and cover with water.  Bring to a boil; reduce heat.  Simmer for 10 minutes or until crisp tender.  Drain the potatoes.
In another bowl add 1/4 cup chicken broth.
1 Tablespoon olive oil.
The recipe called for 2 garlic cloves minced.  I add probably about a teaspoon of minced garlic.
Add 1 teaspoon driend thyme leaves crushed
Add a little fresh pepper
I went out to my garden and got some fresh rosemary.  Finely chopped about 1 Tablespoon.  Can use dried as well.  The fresh smells so good.
Mix all those things together well.
The potatoes look like they are done.
Add the potatoes to the rest of the veggies and meat.
Spread out in a baking dish that has been lightly sprayed.
Drizzle the herbed mixture on top.
Look at all those herbs.
Toss to make sure they are all coated well. Place in a preheated 400 oven.  Bake for 30-45 minutes.
After 30 minutes I took them out and tossed a little and put back in for another 10 minutes.  This is after 40 minutes.
A complete meal in a dish.
