Pecan Pie Energy Bites

These little energy bites/balls are the latest thing in healthy eating.  They are great for that 3:00 in the afternoon little slump.  You want a bite of something but it is too close to dinner for a big snack.  But these little bites are perfect.  There are recipes for all different kinds of flavors.  These little pecan pie balls are really good.  Your family will never figure out what they are made of.
These will last in the fridge for a while.  So make some up and keep them in the fridge for afternoon snacks.
 There's not much that is needed.  Shhh yes that is prunes.
 Start with 1 cup of pecans.
 Spread out on a parchment lined cookie sheet, place in a 350 oven to lightly toast.  It only takes about 6 minutes.  Don't let them burn.
 Now 1 cup prunes.  If your prunes are not sticky, you will need to soak them in water for a little while to soften them up.
 The great thing about this is the food processor does all the work.
 Pulse for a few minutes to chop them.
 Add 1/2 teaspoon vanilla
 Sprinkle of sea salt
 1/2 teaspoon cinnamon
 1/8 teaspoon nutmeg
 1/8 teaspoon ginger
 Let the pecans cool for a little bit.
 Then add to the food processor.
 Pulse until the mixture sticks together. I used a small cookie scoop to make the balls.  The mixture is very sticky.
Once you make the balls, place them in the freezer for about 15 minutes.  Then move them to the fridge.

Pecan Pie Energy Bites Recipe

1 cup dates
1 cup pecans
1/2 teaspoon vanilla
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon ginger
sprinkle of sea salt

Toast the pecans in a 350 oven for 6 minutes.
