Crock Pot Italian Chicken

This is a very quick and easy recipe that is sure to be a crowd pleaser at your house. 
Be sure to add some fresh parmesan cheese on top.
You can use any kind of pasta you like.
Trim the chicken breast.
Sprinkle them with some dried oregano, dried basil, salt and pepper.
Place in the bottom of the crock pot.  You can use these liners to make cleanup a breeze.
Then cover with a jar of spaghetti sauce.  You can use your favorite jar sauce or your homemade sauce. Cover and cook for 6 hours.
When you are ready to eat, cook your pasta per the package directions.
Uncover the crock pot.
Take the chicken out and place on a foil lined baking sheet.
Top with shredded mozzarella cheese.  Place under the broiler in the oven until cheese melts and becomes bubbly.
Grate a little fresh parmesan cheese.
Drain pasta.
Add to the sauce in the crock pot.
Add the parmesan cheese to the pot and stir.
Take out the chicken.
Dish up the noodles and place the chicken on top.  Add a little fresh parmesan cheese.
I like these bowl/plates for pasta dishes.

24 oz jar marinara sauce
1 1/2 cup mozzarella cheese
8 oz penne pasta cooked
1/4 c grated parmesan cheese

Oatmeal Chocolate Chip Bars

We had dinner on the grounds at church the other Sunday and we were suppose to bring desserts.  With the heat being what it is I knew I needed something that would melt, but would go far too.  These were great because I could cut them into small pieces because you know everyone wants a little taste of several different things. 
These were didn't make it into the container.  You know I had to sample them to make sure they were good enough to take.
Nice easy ingredients.  I have learned when I take my butter out to get to room temp I also set out the eggs that I am going to need.  I keep reading how eggs do better in baking when they are at room temp as well.
Start with 2 sticks of softened butter.  Whip it until they are nice and fluffy.
1 1/2 cups brown sugar.  Mix that in.
2 eggs
1 Tablespoon vanilla
3/4 teaspoon salt
3/4 teaspoon baking soda
1 3/4 cups all purpose flour
2 cups old fashioned oats
2 cups chocolate chips.  I used a mixture of milk and semi sweet chips.
The batter will be thick.
Use a jelly roll pan or a 15x10 pan to bake these bars in.  It said to no grease the pan but I had to lightly spray it.  I was afraid not to. Dump it out and spread it out in the pan.
It takes a little bit but it can be spread out in the pan pretty evenly.  Place in a preheated 350 oven.  Bake for 18-20 minutes.
Those edge pieces look nice and chewy.  I let this cool for most of the day before cutting it.
Then cut and enjoy.

1 cup butter softened
1 1/2 cup brown sugar
2 eggs
1 Tablespoon vailla
1 3/4 cup all purpose flour
2 cups old fashioned oats
3/4 teaspoon salt
3/4 teaspoon baking soda
2 cups chocolate chips

Preheat oven to 350.  Spread out in a 15x10 baking sheet.  Bake for 18-20 minutes.

Creamy Stovetop Mac and Cheese

I needed something else to go with dinner the other night.  You can't go wrong with mac and cheese.  It is comfort food at its best.  I changed the recipe up just a little bit at the end.  It was the basic recipe but I wanted to bake it just a little bit with some extra cheese.  I added something else to the top as well.
It sure smells good.
This recipe uses a blend of two cheeses.
I started by cooking my pasta first so I could use that pot without messing up another one.  So I gathered and measured my ingredients while I wanted.  Start with 1/4 cup butter and 1/4 cup flour.
1 1/4 cup heavy cream
The 16 oz of pasta is now cooked and drained.
Melt the butter in the pan.
Most melted before I put it back on the stove.
Add 1/4 cup flour
Stir well until it is well mixed and no lumps of flour.
Then add the heavy cream. And 1 cup milk.  ( I deleted the picture my mistake)
Stir well. It's beginning to bubble.
When it bubbles reduce heat and add 1 cup sharp and 1 cup mozzarella cheese.   Stir until the cheese melts.
Add the past to the pot and stir until coated.  You can eat now.
But I put it in a baking dish.
I dumped out a little panko breadcrumbs.
Added some parmesan cheese and mixed it.
Sprinkled it on top and put in a 350 oven I think.  I was baking my meatloaf and just added this to the oven for a little bit until the panko gets brown.
Then enjoy.
