Roasted Cabbage Wedge with Onion Dijon Sauce

I am so excited to share this cabbage recipe with you.  I have decided I could eat cabbage once a week, especially like this.  The sauce that goes on this cabbage is wonderful.  I love roasted cabbage but this sauce kicks it up a notch or two.  There are a few things I would do differently next time but the sauce isn't one of them.
The recipe called for cutting the cabbage into wedges.  I thought the wedges were too big to get that nice caramelized edges.  So next time I am going to cut it into the cabbage rounds or 'steaks' as I like to call them.  The edges seem to roast a little better.
You can use regular or some kind of infused olive oil.
Cut your cabbage in half.
Then cut that into halves.  Cut the hard core out of the ends.  I think I could and should have cut it again.
Brush well with olive oil.
Put one of the cut sides down on a parchment lined cookie sheet.
Salt and pepper the cabbage. Put in a preheated 450 oven.  Cook for 10-12 minutes and then flip the wedges and cook for another 8-10 minutes.

While the cabbage is cooking start on the sauce.  3 Tablespoons butter
1 Tablespoon Dijon mustard
Melt the butter.
1/2 teaspoon minced garlic
2 Tablespoons minced fresh onion.  I grated it.
Mix it all together.
After the first 12 minutes of baking.
Turn it.
After the second 10 minutes of baking.
Then take it out of the oven and brush that sauce on.
And enjoy.  I will make this again but make the cabbage much smaller.

1 green cabbage
olive oil
salt and pepper

Sauce
3 Tablespoons melted butter
2 Tablespoons minced fresh onion
1 Tablespoon Dijon mustard
1/2 teaspoon minced garlic
salt and pepper

Bake at 450 for 10-12 minutes, turn and bake another 8-10 minutes.

Overnight Raspberry Oatmeal

These overnight oatmeal recipes are very popular right now on Pinterest.  I liked my crock pot oatmeal in the winter so I thought I would give these cold oatmeals a try.  The original recipe called for blackberries and I would have preferred blackberries but I did not have any, so raspberries were the second choice. 
This oatmeal was interesting.  It was nice and thick.  I will say this it was very filling and lasted all morning long.
I also think fresh fruit would have been better too.
32 oz of smooth vanilla yogurt.  I got the Greek kind.  You could use plain but I like vanilla a little better.
1 cup oats.  You can use either old fashion or quick.  I had more old fashioned ones so that is what I went with.
1 cup fruit
4 teaspoons chia seeds
I had never had chia seeds before so that was another reason I wanted to try this recipe.  I lucked out and Walmart had these small packages beside the huge container of chia.  This way I could see if I liked them before I became more invested.  The seeds were found with the flour.  I wasn't sure where to look so I am helping you out here.  Chia seeds have lots of health benefits so give them a try.
Mix well.
The recipe picture showed the mixture in a fruit jar but I didn't have any empty ones so I used plastic containers with lids.  Put in the fridge and pull out for breakfast.
You can garnish with fresh fruit before eating too.

Overnight Raspberry Oatmeal Recipe

32 oz Smooth style vanilla yogurt
1 cup oats
4 teaspoons chia seed
1 cup fruit

Bacon Cheese Pork Chops

I have enjoyed finding new pork chop recipes this summer.  The nice thing is that they are all very good and easy to make. Give them a try soon.
I can't wait to share the roasted cabbage with the sauce that I also made for dinner this night.
Bacon and cheese can't go wrong can you?
2/3 cup brown sugar
4 cloves of garlic.  I use the already minced garlic from the fridge.  I used about a tablespoon.
Mix that up well.
Lay the chops out in a 9x13 dish and put the brown sugar mixture on top of each chop.
Then take a piece of back and put it across the chop.  Turn the ends under.  Place in a preheated 400 degree oven.  Bake for 35-40 minutes.
Take the chops out of the oven after the first cooking time.
Sprinkle the top of each chop with shredded cheese.  This is some of my Miss St cheese which is a mixture of cheddar and Swiss.  The recipe called for a mixture of cheddar and mozzarella. So you can use which ever cheese you like. Put back in the oven for 5-10 minutes.
Once the cheese is melted good they are done.
Serve with some good veggies.

Bacon Cheese Brown Sugar Pork Chops Recipe

4 boneless pork chops
4 slices bacon
4 cloves garlic
2/3 cup brown sugar
1/2 cup shredded mozzarella cheese
1/2 cup shredded cheddar cheese

Bake for 35-40 minutes at 400.  Add cheese and bake for 5-10 minutes.

Grilled Pineapple

The grilled pineapple we had the other night was so good I decided to try it again with another recipe.  I need to try it again because it was raining this day and it cooled the grill off too much so the pineapple didn't get the sides caramelized like before.
Grilled fruits are really good and you should try it.
Very easy recipe.  Was suppose to have lime juice but I had lemon.
3 Tablespoons honey
1/4 cup brown sugar
2 Tablespoons lemon juice
Place all of this in a zip lock bag. Squish it all together.
Put the pineapple in and make sure they all get coated.
Blend it all well.  Put in the fridge for an hour.
Take it out when you are ready for the grill.
It's about time for the heat.
Leave it on long enough for the outside to caramelize well.

Grilled Pineapple Recipe
1/4 cup brown sugar
3 Tablespoons honey
2 Tablespoons lemon juice.
