Homemade Chicken Tenders

Who doesn't like chicken tenders or fried chicken?  When I took the package of chicken breast out of the freezer I realized they were really too big for me to fry so I cut them in strips to fry.  I am always afraid that with large chicken breast that it won't get cooked all the way through.  So give these a try soon.
It doesn't take much to make really good chicken tenders at home.
A couple of hours before you want to cook the chicken you will want to cut the chicken into strips.  Salt and pepper it a little.
Then cover the chicken pieces with buttermilk and let it soak in the fridge for a couple of hours.  You can put a drop or two of hot sauce in the buttermilk too to give the chicken a little zip.
When you are ready to batter and fry the chicken, get out a deep pan to put the flour in.  This will help keep the mess down a little.
To the flour I added some Paprika.
Seasoning salt
This Nature's Seasoning
Cayenne pepper.  You can leave this out or add more depending on how spicy you like your food.
Pepper
Salt.
Mix it well.
While your oil is heating in your skillet, dip a couple of pieces of chicken into the flour and coat well.
You don't want to put too many in the pan because you want to make sure they are well coated.
Place several pieces in the hot oil.  Make sure they don't touch and move them around a little with your tongs to make sure they are not sticking.
Turn when they are brown on one side.
Drain on a rack.
Serve with the honey mustard sauce I posted yesterday.

Honey Mustard Sauce

Who doesn't like honey mustard sauce with chicken fingers?  This is a very simple sauce that you can throw together in a hurry.

Four simple ingredients.
Start with 3/4 cup mayo.
Add 3 Tablespoons honey.
2 Tablespoon mustard
1 Tablespoon lemon juice
Whisk together well.  Store in the fridge.  The sauce will last for a couple of weeks in the fridge.
Serve with chicken tenders.

Honey mustard sauce recipe

3/4 cup mayo
3 Tablespoons honey
2 Tablespoons mustard
1 Tablespoon lemon juice
 Can add horseradish to taste.

I am sharing this again this year because you can never have too many quick meals.  The Pioneer Woman calls many recipes like this her 16 minute meals.  I don't know if they take 16 minutes or not but they don't take too long from the stove to the table.

Yesterday I brought you a post of crock pot meals.  Today is a list of meals that are quick from the stove to the table.  This should give you a good variety of things you can fix for those days when you just don't have that much time to cook.

With school starting back today and schedules becoming hectic with homework, practices, and all those extra curricular activites sometimes mealtime can fall to the back burner.  No need for fast food every night, throw something into the crock pot and dinner will be ready when you come home.  Hope these recipes come in handy this school year.

Christy Jordan's Super Fast Succotash

Christy Jordan is a local blogger that has made it big.  Last month she had her own recipe magazine come out from the Taste of the South publishers.  This recipe was in the magazine.  First thing I thought of when I saw it was Sylvester the Cat's "Sufferin' Succotash"  So I made Sufferin' Succotash for dinner last night to go with some baked pork chops.  I know some of you will say that you don't like lima beans.  I will admit that they are not my favorite but I like them in vegetable soup.  As a kid I use to like to shell the colored ones because you never knew what they were going to look like. They were always so pretty but when they were cooked they weren't so pretty any more.  Enough traveling down memory lane and on to the recipe.
It doesn't take much to make this recipe.
Set out 3 cups of lima beans.  Let them thaw.
2 cups corn.  Let it thaw.
Cook 4 pieces of bacon.  Normally I cook it in the microwave but you need about a Tablespoon of the bacon grease for the recipe.
Drain the pimientos.
To the pimientos add 1 Tablespoon dried parsley.
1 tablespoon cider vinegar
1 teaspoon sugar
Salt
Pepper
Mix well.
Take up the bacon.  Turn down the heat.
Add the lima beans and corn.  Cook until heated through.
Then add the pimiento mixture.
Mix well.
Crumble the bacon on top.
Stir well.
A nice different side dish to go along with my pork chops.

Super Fast Succotash Recipe

4 slices bacon
3 cups lima beans
3 cups corn
1 4 oz jar pimientos
1 Tablespoon dried parsley
1 teaspoon sugar
salt and pepper
