German Chocolate Cake Cookies

 Today's new cookie will be a new favorite around our house.  My husband loves German Chocolate Cake and this brings all those flavors together in a cookie. And let's be honest cookies are much easier to make than a three tiered cake.  Give these a try. 

All that chocolaty goodness.  They are so good warm. 

Don't worry about all these ingredients these go together really fast.

Start with 2 sticks softened butter.
1 cup brown sugar
1 cup sugar.  Mix the butter and sugars well until nice and fluffy.
Add 2 eggs
2 teaspoons vanilla. Mix well
1/2 cup unsweetened cocoa.  Mix well and slow.  Don't ask how I know to start the mixer slow.
Add 2 1/4 cups all purpose flour.  Add a little at a time.  I forgot the picture for 1 teaspoon baking soda and a pinch of salt.
All that chocolate is well mixed.
Add 1 cup semisweet chocolate chips.  I chose to use the mini chips.  
1 cup shredded sweetened coconut
1 cup chopped pecans
This dough is full of good things. 
These are my test cookies.  Place them in a preheated 375 oven.  Bake for 8-10 minutes.
These are going in the freezer for later.
We enjoyed these the day I made them and look forward to enjoying more during the holidays. 

German Chocolate Cake Cookie Recipe

2 sticks softened butter
1 cup brown sugar
1 cup sugar
2 eggs
2 teaspoon vanilla
1/2 cup unsweetened cocoa
1 teaspoon baking soda
pinch of salt
2 1/4 cups all purpose flour
1 cup semisweet chocolate chips
1 cup sweetened coconut
1 cup chopped pecans

Preheat oven 10 375.  Bake for 8-10 minutes.

Coconut Oatmeal Pecan Cookies

This latest new cookie is packed full of all kinds of goodness. You could even throw in some dried cranberries or cherries if you want to add a little something more.   

These are still warm from the oven.  I wish you were here to sample them with me. 

Yes I know there looks like a lot of ingredients, but they are easy to make.
Start with 2 sticks softened butter.
Add 1/4 cup brown sugar and 3/4 cup sugar
Whip that until the butter is fluffy. 
Add 2 eggs
1 Tablespoon vanilla
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
I bought this little pinch bowl at the Pioneer Woman's place in Pawhuska this year.  It is just perfect to measure your spices all at one time, then dump into the batter all at one time.  After adding the spices mix everything well. 
Add 1 1/4 cup all purpose flour.  Add a little at a time and scrap down the sides after mixing. 
Add 2 1/2 cups old fashioned oats.  Add them a little at a time.
Add 1 cup unsweetened coconut
1/2 cup finely chopped pecans  Mix this all together well.  Scrap down the sides well. 
These are going in the freezer for later.  To bake them place in a preheated 350 oven and bake for 10-12 minutes. The centers will be soft.  Let them rest on the cookie sheet for about 5 minutes or so. 
These were my test cookies.  I think they pass.  These will be a hit this Christmas. 

Coconut Oatmeal Pecan Cookie Recipe

1 cup softened butter
1/4 cup brown sugar
3/4 cup sugar
2 eggs
1 Tablespoon vanilla
1 1/4 cup all purpose flour
1 teaspoon bakinb soda
1 teaspoon cinnamon
1/2 teaspoon salt
2 1/2 cups old fashioned oats
1 cup unsweetened coconut flakes
1/2 cup pecans

Place in a preheated 350 oven.  Bake for 10-12 minutes.

Cardamom Orange Dark Chocolate Butter Cookies

 This new cookie has turned out to be one of my favorites.  I found this recipe during the holiday season last year and put it back to make this year.  It has cardamon in it and that is my secret ingredient in my gingerbread men so I was excited to try this recipe. 

These are my sample cookies.  They sure were good. 

The only draw back to this recipe is that it uses 2 cups of butter. The large Hershey bars are right at 1 1/2 cups chopped.
Before you start mixing up the dough do a little work first.  You will need to zest a large orange.
It's a good Tablespoon or so.  It smells so good. 
And chop 1 1/2 cups dark chocolate.
Now we are ready to start mixing.  Place 4 sticks-2 cups softened butter in a bowl.
Add 2 cups sugar.  Whip until fluffy.
Add the orange zest.
1 egg
2 teaspoons vanilla
1 teaspoon cardamon
3/4 teaspoon salt
Mix all this well. 
Add 5 cups + 2 Tablespoons of all purpose flour
When all that is mixed well add the chopped chocolate. 
The dough all mixed up.  It is a perfect blend of orange, chocolate and spices. 
These are the sample cookies.  Place in a preheated 375 oven and bake for 8-10 minutes. 
These are going in the freezer. 
And these are for enjoying now.  I really think you will like these cookies.

2 cups softened butter
2 cups sugar
zest of one orange
1 egg
2 teaspoons vanilla
1 teaspoon cardamon
3/4 teaspoon salt
5 cups +2 Tablespoons all purpose flour
1 1/2 cups chopped dark chocolate

Bake in a preheated 375 oven for 8-10 minutes.
