Crock Pot Santa Fe Chicken

The crock pot recipes continue.  This was another very easy one too.

The cheese sauce was very yummy.

It doesn't take much for this recipe.

Put your chicken breast in the crock pot with some chopped onions.  Cook covered on high for 3 hours.  At the end of three hours drain the juices.

In a bowl mix the two cans of Campbell's Fiesta Nacho Soup.

Add to that one can of green chiles.  I drained a little of the juice off the top.

Mix that together well.

Pour over the chicken.  Cover and cook for an additional 30 minutes or so.

Serve with a side of rice.

boneless chicken breast
small onion
2 cans Campbell's Fiesta Nacho Soup
1 can diced green chiles

Slow Cooker Pumpkin Harvest Chex Mix

You can make almost anything in a crock pot these days.  I was very surprised that you could make chex mix in there.  I tried it and it was very good.  Very fall.

Give it a try.

There were lots of ingredients and not much space on my counter.

Start with 2 cups wheat chex cereal

2 cups vanilla chex cereal

2 cups cinnamon chex cereal.  There's enough cereal left in the boxes for another batch too.

1 cup pecans.  I am going to put more next time.  I like the pecans

1 cup dried cranberries

1/2 cup pumpkin seeds

1 cup mini graham crackers.  My store did not have the mini crackers so I got Teddy Grahams.

Stir it all together well.  I even shook the bag and that helped mix it.

In a bowl add 1/4 cup brown sugar

1 Tablespoon pumpkin pie spice

1 1/2 teaspoons vanilla

1 stick of butter melted

Mix that together well.

Pour over the cereal mixture.

Stir, shake whatever you need to do to mix it well and make sure it is well coated.

Cook uncovered for 2 hours on high.  Stir well every 15 minutes.

After 2 hours spread it out on wax paper on a cookie sheet or something. I am having to make do.

Then serve.  Any leftovers store in zip lock bag or container.

1/4 cup brown sugar
1 tablespoon pumpkin pie spice
1 1/2 teaspoon vanilla

Less Chaos and More Normal Part 6

Visual things have been going slow lately. Mainly electrical work and Joe running cables.  I think if the Big Bad Wolf huffed and puffed and tried to plow our house down it would be held together by cables.  I think he said he ran over 2,000 feet of cables.  That includes phone, cable and internet.  He has run lines to any place he thinks in the next 30 years we might need them.  So one day if the fridge has the capability to send me a text when I am out of milk or need pickles I will be ready. Some of these wires I have no clue what they do or are for but I have been assured I will want them.

So what has been happening at the Grobmyer homestead?  Well glad you asked.  This week we have been getting spray insulation.  You may not know what that is but it is really cool to see.  It is two chemicals that is shot through two hoses by high pressure air. It starts out as a thick liquid and then grows.  Let me show you in pictures.

These are the two guys that have been crawling through the tight spaces to make our house tight.

You can see the hose that they use.  It has all three taped together.  They cover all the windows and doors because you do not want to get this spray on anything you don't want insulated.

They spray all the walls.  If it expands past the wall line they have a neat little tool to cut it off. Sometimes you can't control how much it expands.

The other bit of good news is we got sod!  No more red clay!  I was so tired of the dirt.  The last big rain really washed away some of our dirt.  It almost looks strange having grass again.

Sod was delivered yesterday.

It came in rolls.

This is Lincoln County Tennessee sod.  The only problem we have is that we didn't order enough.  The back of the wall and the little patch in front didn't get sod today.

They put the roll of sod on the machine and then he starts rolling it across the yard.

The workers then pat it down.

The yard is beginning to look good.

We are even trying grass on the side yard.
