Cherry Garcia Cookies

I love the Cherry Garcia ice cream that a popular company makes.  The flavors of cherry and chocolate are so good together.  This was one of the first recipes I pulled when looking for new ones for the holidays.  I think you will like these cookies as well.

You can see the pieces of cherry in the cookies.  Cherries are so good.
You can use any kind of chocolate you like.  I used semi sweet.  If you have the chunk chocolate that would be good also.
Drain the jar of maraschino cherries.  I could only find the ones with the stems.  So remove those.
Because these cherries are sticky I put them in the food processor to chop.
Let the processor do the work.
Start with 3 sticks softened butter.  These are buttery cookies.
Add 1 cup sugar.  Mix well.
Add one egg
1 teaspoon baking soda
1 teaspoon almond extract.  If you don't have any go ahead and use the vanilla.  The almond is really good in it though.
1/4 teaspoon salt
3 cups all purpose flour.  Remember a little at a time.  You do not want to clean up flour all over your kitchen.
Now add in the cherries.
The bag of semi sweet chocolate chips.  Somehow I missed a step.  Scoop the dough.  Chill the dough for at least 30 minutes.  Preheat oven to 350.  Bake 12- 14 minutes.
They got a little brown on bottom but they were still good.
Enjoy.  You will think you are eating ice cream.  Wait they would be good with some ice cream.

Cherry Garcia Cookies Recipe

1 cup sugar
3 sticks softened butter
1 egg
1 teaspoon almond extract
3 cups all purpose flour
1/4 teaspoon salt
1 teaspoon baking soda
1 bag semi sweet chocolate chip
1 10 oz jar maraschino cherries drained and chopped

Chill dough
Preheat oven to 350.  Bake 12-14 minutes.

Salted Milk Chocolate Chunk Cherry Cookies

Using sea salt is the newest baking/cooking craze it seems.  I have seen more and more recipes that use some form of sea salt.  They talk about it a lot on the cooking competitions too.  On the baking championships they always talk about how salt enhances the flavor of sweets.  After making a couple of recipes and using extra sea salt I have to agree.  I bought some flake sea salt because when I used the coarse sea salt it didn't seem to mix as well.
These cookies get their final sprinkling of sea salt after they come out of the oven.
Once again use old fashioned oats.
Start with 2 sticks softened butter
1 1/2 cups brown sugar.  Mix well.
Add 2 eggs
2 Tablespoons vanilla
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt--make sure you use unsalted butter
1 3/4 cup all purpose flour.  Mix a little at a time.
1 3/4 cup old fashioned oats
I used the chocolate chunk pieces you can buy in a bag like chips. Rough chop them.
Add 1 cup of them to the batter.
1 cup dried cherries, rough chopped.
Scoop dough onto baking pan.  These are going to the freezer.  If you are making them to bake now you need to chill dough for 2 hours or you can put in the freezer for 15 minutes.  Then preheat oven to 350.  Bake 11-13 minutes.
When they come out of the oven, sprinkle with flake sea salt.
Enjoy.

1 cup milk chocolate chunks
1 cup dried cherries chopped

Chill dough.  Preheat oven to 350.  Bake for 11-13 minutes.  Sprinkle with sea salt.

Toblerone Cookies

You may have heard of Toblerone but not sure what it is.  It is the triangular candy in the yellow tube that you usually see at Christmas time.  It is a German candy.  The bar is long and in triangular pieces all connected that you break off.  My husband is a fan of the candy so I knew this would be one of the cookies for this year. They are so good I bought two more bars to make another recipe for the freezer.

I did bake up a few more than normal.  I think I had a few elves around here that wanted to sample that day. These cookies will spread as you can see.
It takes two 3.5 oz bars of candy.  Other than that it is a very basic recipe.
Start with 2 sticks of butter softened.
1 cup brown sugar and 1/2 cup sugar.  Add to the butter and mix well.
1 teaspoon baking soda
1 teaspoon salt
2 eggs
1 1/2 teaspoon vanilla
2 1/2 cups all purpose flour
This is what the Toblerone bar looks like.
You will want to finely chop the bars..  Add to the dough.
Scoop the dough onto your cookie sheet.   You need to chill your dough for about an hour. These are going in the freezer.  Preheat oven to 350.  Bake for 10-12 minutes.
Then enjoy.

Toblerone Cookies Recipe

1 cup butter softened
1 teaspoon salt
1 teaspoon baking soda
2 eggs
2 1/2 cups all purpose flour
1 1/2 teaspoon vanilla
1 cup brown sugar
1/2 cup sugar
2- 3.5 oz bars of Toblerone

Preheat oven to 350.  Bake for 10-12 minutes.

Apple Cider Cookies

The fall and holidays just seem to scream Apple Cider.  You can usually find all kinds of fresh cider.  These cookies are so good and smell wonderful.  I know I say that a lot but these smell like fall.

These cookies will spread so plan accordingly.
When you are getting cider for the holidays buy a little extra so you can make these cookies
Start with two sticks softened butter.
Add 1 cup sugar.   Mix well.
Add in one egg.
Add in 1/4 cup apple cider
1/4 cup molasses
1 teaspoon vanilla
1 Tablespoon instant apple cider mix.  This is 1 packet.  One packet has just a little oner 1 Tablespoon.  I dumped the rest in the batter as well.
1 Tablespoon cornstarch.
1/2 teaspoon salt
2 teaspoon apple pie spice
2 teaspoon baking soda.  Now mix all of this well.  It's going to smell really good.
2 1/3 cup all purpose flour.  Add a little at a time and mix well between.
Now in another bowl mix 1/4 cup sugar
2 Tablespoon apple cider mix and if you have it 3 Tablespoon turbinado sugar.  That is the big pieces of sugar.  I didn't have any and it's fine without.  If you have it and want to use it go for it.
Mix this well.
These are my test cookies.  Scooped out on the parchment lined cookie sheet.
Now sprinkle the apple cider mix and sugar mixture on top. Place in a preheated 350 oven.  Bake for about 10 minutes.
Here is my freezer sheet.
I went ahead and put the cider sugar mixture on top before I freeze them.  I had some left over and I kept it because when I bake them I might need to put some more on top.
Let them cool on the cookie sheet.

Apple Cider Cookies Recipe

2 1/3 cups all purpose flour
1 Tablespoon cornstarch
2 teaspoon baking soda
2 teaspoon apple pie spice
1/2 teaspoon salt
3 Tablespoons instant apple cider mix divided
2 sticks softened butter
1 cup sugar
1/4 cup apple cider
1/4 cup molasses
1 egg
1 teaspoon vanilla

In a separate bowl mix 1/4 cup sugar and 3 Tablespoons turbinado sugar and 2 Tablespoons apple cider mix.

Preheat oven to 350.  Bake for 10 minutes.
