Soft and Chewy Pumpkin Oatmeal Cookies


I really like baking with pumpkin.  It is easy to use and adds some extra moisture to your cookies.  They will be nice and soft and a little gooey inside.  Add the oats in this one and there's a lot of fiber in these cookies too.
These smell really good.  I guess you could say they smell like fall.
Make sure you use old fashioned oats in this recipe.  I'm not sure how they determine if you use regular or quick oats in a recipe.
Start with 1 stick of softened butter
Add 1/2 cup brown sugar and 1/4 cup sugar to the butter and mix well.
Add 1 egg yolk.  Not sure why we are not using the whole egg.
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon vanilla.  Mix all the spices into the batter well.
1 cup all purpose flour.  Add a little at a time.
1/3 cup pumpkin puree.  Not pumpkin pie mix.  I will be honest I have never found anything but regular plain ole pumpkin.
1 1/2 cups old fashioned oats.  Mix well.  If you are going to bake when you mix them you need to chill the dough for at least 30 minutes.  Since I was going to freeze I went ahead and scooped the dough onto my cookie sheet for the freezer.  When ready to bake preheat oven to 350.  Bake for 9-12 minutes.  Let cool on baking sheet for 5 minutes.

1 cup all purpose flour
1 teaspoon pumpkin pie spice
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup softened butter
1/2 cup brown sugar
1/4 cup sugar
1 egg yolk
1 teaspoon vanilla
1/3 cup pumpkin puree
1 1/2 cups old fashioned oats

Chill dough
Preheat oven to 350  bake for 9-12 minutes.
