25 Days of Christmas Cookies: Day 17 Cranberry Pistachio Cookies

This was actually the last cookie I made and put in the freezer.  I'm sorry there seems to be a lot of cranberry recipes this year.  They are really good and go well with several different items.  So if you like pistachios you will enjoy this cookie.

This cookie is suppose to be dipped in white chocolate but since I am going to be making them a few at a time I decided to chop a little of the white chocolate and put it inside the cookies.
If you are going to dip the cookies in white chocolate either half the cookie or the back of the cookie yo will want to use the bar of white chocolate.  This chocolate has at least 20% cocoa butter in it and that is better for dipping that say white chips.
Start with 1 stick softened butter
1/2 cup sugar
1/2 cup brown sugar.  Mix well.
1 egg
1 teaspoon vanilla
1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups all purpose flour.  Mix well.
3/4 cup dried cranberries
3/4 cup pistachios
Chop them
A few oz white chocolate
Chop it and add to the dough.
Scoop and get them ready for the freezer.  When ready to bake preheat oven to 350.  Bake for 10-12 minutes.
I think you will enjoy this cookie.  Pistachios are not usually found in cookies so it is a nice surprise.

Cranberry Pistachio Cookies Recipe

1 1/2 cups all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup softened butter
1/2 cup sugar
1/2cup brown sugar
3/4 cup dried cranberries
3/4 cup chopped pistachios
8 oz white chocolate bar

Preheat oven to 350 bake for 10-12 minutes.
