25 Days of Christmas Cookies: Day 13 Butter Pecan Cookies

Who doesn't love the butter pecan flavor?  Whether it is in ice cream or cookies the smooth buttery flavor with the saltiness of the pecans. The perfect blend of flavors.  This is a cookie that won't disappoint. You can add a little extra salt on top as you get ready to bake if you like. 

This cookie is so good when it is warm from the oven.  It's not bad cold either. 
This is a very basic cookie recipe with pecans.
Start with 2 sticks softened butter.  Now you know why I was looking for butter on sale.
1/2 cup sugar
1 cup brown sugar.  Mix well
2 eggs
2 teaspoons vanilla
1 teaspoon cornstarch
1 cup baking soda
1/2 teaspoon salt
2 1/2 cups all purpose flour
1 1/2 cups chopped pecans.  I would use the food processor to get them chopped fine enough.
Look at that batter with all the pecans in it.
In a separate bowl 1/3 cup sugar
Roll your cookie dough in the sugar.  You can add some sea salt as well.
Ready for the freezer.
I was going to sprinkle some sea salt on top before I put them in the freezer but then decided that it would probably fall off.  So I am going to put some on the top when I bake them.
Make sure you label your bags well before you put them in the freezer. 
To bake the cookies place in a preheated 350 oven.  Bake for 11-12 minutes. 

Butter Pecan Cookie Recipe

1 1/2 cups chopped pecans
2 sticks softened butter
1/2 cup sugar
1 cup brown sugar
2 eggs
2 teaspoons vanilla
2 1/2 cups all purpose flour
1 teaspoon cornstarch
1 teaspoon baking soda
1/2 teaspoon salt

In another bowl
1/3 cup sugar

Preheat oven to 350.  Bake for 11-12 minutes.
