25 Days of Christmas Cookies: Day 18 Peppermint White Chocolate Cookies

I love peppermint but especially at Christmas.  There are so many recipes that uses peppermint.  I hope you like this one.  

The white chocolate is a good balance to the peppermint.
The recipe called for crushed peppermints.  I found the peppermint white chocolate and thought it would be better.  I wasn't sure how the candy would freeze. If you have peppermint candy you want to crush go ahead and do so.
3/4 cup softened butter
1/2 cup sugar
1/2 cup brown sugar
Mix well.
1 egg
1 1/2 teaspoon vanilla
3/4 teaspoon peppermint extract
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cornstarch
2 cups all purpose flour
Here's the peppermint chunks
1/2 cup peppermint pieces and 3/4 cups white chocolate chips
Scoop the dough.  It's ready for the freezer.  When ready to bake place in a preheated 350 oven.  Bake for 12 minutes.  
You can fancy up the cookies with some melted white chocolate drizzled over the top. 

Peppermint White Chocolate Cookies Recipe

2 cups all purpose flour
1 teaspoon cornstarch
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup softened butter
1/2 cup brown sugar
1/2 cup sugar
1 egg
1 1/2 teaspoons vanilla
3/4 teaspoons peppermint extract
3/4 cup white chocolate chips
1/2 cup crushed peppermint candy

Preheat oven to 350.  Bake for 12 minutes.
