Carrot Zucchini Fritters

Those of you that have gardens know that you get tons of fresh zucchini during the summer.  Well you start to run out of things to make with all that zucchini.  Why do you think there are so many recipes?  That's why they started putting zucchini with chocolate.  These little fritters will be a nice addition to your recipes.

These are nice and golden brown and delicious.
The recipe didn't call for onions, but onions make everything better so I added them.
Grate 2 cups of zucchini and let it drain.  Sprinkle a little salt on top and that will help get rid of the moisture.
Grate 2 cups carrots.  I don't remember how many carrots I used.  It mainly depends on how big your carrots are.
2/3 cup all purpose flour.
Add the carrot to the flour.
I added the chopped onions.
2 eggs
A little minced garlic.
Now add the drained zucchini.
Add the 2 eggs.
Mix well.
Add spoonfuls to a skillet with a little hot oil.  Fry until golden on both sides.
Then enjoy.

Carrot Zucchini Fritters Recipe

2 cups grated zucchini
2 cups grated carrots
2 cloves garlic
2/3 cup all purpose flour
2 eggs
1 small onion chopped
Put oil in the bottom of the skillet.  Cook 2 to 3 minutes.
