Banana Oat Breakfast Cookies

I have enjoyed making breakfast cookies and trying new recipes.  I had some bananas that needed to be used so I thought I would try this recipe.  This recipe has a different texture than the other cookies.  This was not so much like a cookie as one of the protein bars that you can buy.  These cookies had more moisture than the others.  Not that they were bad just different.  Not what you expect in a cookie.
For those of you that like that sort of thing I believe these are vegan.  There's no egg, flour, sugar and if you can get gluten free oats they could be gluten free as well.
Start with 2 bananas and use the mixer to make them fluffy.
Add 1 1/2 cups oatmeal.  This can be quick or old fashioned.
1 cup unsweetened applesauce
1 teaspoon vanilla
1 teaspoon cinnamon give or take
1/3 cup cranberries
1/4 cup chopped walnuts, can be toasted.
Mix all that together well. Let sit for 10 minutes before you scoop it up.
Using a scoop, scoop out the mixture onto a parchment lined cookie sheet.  Place in a preheated 350 oven.  Bake for 20-30 minutes.
Fresh from the oven.  Let  sit on the cookie sheet for about 5 minutes.
Enjoy for breakfast or an afternoon treat.

Banana Oat Breakfast Cookies Recipe

1 1/2 cups oatmeal quick or old fashioned
2 ripe bananas mashed
1 cup unsweetened applesauce
1/3 cup cranberries
1/4 cup chopped walnuts
1 teaspoon vanilla
1 teaspoon cinnamon
Preheat oven to 350.  Bake for 20-30 minutes.
