I was amazed when I started looking a couple of months ago for crock pot recipes at how many I have found. And even more importantly for me they are super simple with very few ingredients. While normally that would not be a requirement for me, but lately the easier the better.
Add a veggie and some rice and you have a complete meal.
In the last couple of years I have really used the French onion soup in many recipes. I really like it a lot.
Start with boneless skinless chicken breast in the bottom of the crock pot. Cover and cook for 3 hours on High.
After the 3 hours, mix 1/2 cup sour cream
With one can of French onion soup
Mix well.
At the end of the 3 hours drain the juices off the bottom of the crock pot.
Pour the sauce on top. Cover and cook for an additional 30 minutes on High.
Serve with rice and a pretty bright veggie and you have a really nice quick and easy meal.
Crock Pot French Onion Chicken Recipe
Boneless skinless chicken breast
1 can Campbell's French onion soup
1/2 cup sour cream
Cook chicken for 3 hours in the crock pot on High. Drain juices, add sauce and cook for additional 30 minutes on High.

Red Velvet No-Bake Cheesecake Recipe
For opening weekend of the Alabama football season I had to find something red velvet that I could make. I found this recipe and it met all my requirements, starting with no bake.
Oh did I mention that it starts with double stuff Oreos? Got to be good right? Yes that is the SEC Network in the background. Best new channel.
Melt 3 Tablespoons butter.
You will need to crush 16 double stuffed Oreos. Crushing them in the food processor is the best way to get small crumbs.
Add them to the melted butter. I forgot to take pictures of putting some in the bottom of some plastic cups. I had some small plastic I think you would call them punch cups that were perfect for this recipe. Even better you can throw them away. Take about 1/4 cup of the cookie crumbs and press them into the bottom.
Then add 2- 8 oz pkg of softened cream cheese.
1/2 cup confectioners sugar
Mix well.
Melt 8 oz semi sweet baking chocolate.
Add 1 teaspoon vanilla
1 1/2 Tablespoons red food color
Stir the chocolate
Add it to the cream cheese mixture.
Then fold in the 8 oz container Cool Whip.
And you can see it become red.
Spoon on top of the cookie crumbs. You can top with some whipped cream if you like. Store in the fridge.

Crock Pot Cheesy Broccoli Chicken
Oh this was a good find. Usually I like finding crock pot recipes that cook all day. I mean that is the purpose of a crock pot to put it on when you leave and it will be done when you get home from work. This one the directions said to cook on high for a certain amount of time. I gave it a shot and I really liked it. Works great when you are home and don't want to heat up the oven or don't have a oven.
I forgot to get the cheese out when I made this picture.
Put your chicken in the bottom of the crock pot. Cook on high for 3 hours or so. Since these pieces were really big I ended up cooking them a little longer.
I also put a little salt and pepper on them before cooking. This is after the 3 hours. Drain the juices off the chicken before adding the topping.
In a bowl mix 1/2 cup sour cream and I just eye balled it.

Mix all that together. It is thick.
Spread it over and around the chicken.
Add the frozen broccoli on top. Recover and cook another hour on high.
Dinner is ready.
Serve over some rice. This was really good and it was good leftover.

Brown Sugar Baked Peaches
Peaches have been really good this year. This was an interesting recipe. What caught my attention was when it said it was better than doughnuts. I was ready to accept that challenge. I made these peaches for breakfast the other morning. It was a nice treat.
The brown sugar caramelizes on top making it so good.
Doesn't take much for these.
Cut the peach in half and remove the seed.
Add a little pat of butter.
Sprinkle brown sugar on top. Make sure you cover it well. Place in a preheated 375 oven. Bake for 30 minutes.
Now if you were making these for dessert some ice cream would be good on them.
I will admit I was worried about baking peaches. I thought they might get mushy but they really didn't. They had a good flavor.

Peach Dumpling Roll Ups
I made something similar to this with apples, this recipe is a little different. I wish I had had some ice cream to go on top.
I wish you could smell how good these smell. One day we are going to have to invent scratch and sniff for computers.
Find two really nice large peaches.
In a saucepan melt 1 stick of butter.
Add 1/2 cup sugar
1/2 cup water. Bring the saucepan to a low boil.
Cut each peach into four pieces.
Unroll the crescent rolls.
Take one triangle, sprinkle a little cinnamon on it.
Then take one peach piece, roll the crescent roll around it.
Once the butter mixture has come to a boil, remove from heat.
And pour over the peaches.
Place in a preheated 350 oven. Bake for 27-30 minutes.
Fresh from the oven.
Serve them while they are warm. Add some vanilla ice cream to take it up a notch.
