Shrimp Tacos with Chili Cream Sauce




These were a nice twist to our normal tacos. 
 This is a really quick easy meal.  It probably took 15 minutes or so from start to finish.
 I melted a little butter in a skillet.
 Peel and clean your shrimp.  Frozen shrimp are really great to keep in the freezer.  They take just a few minutes to thaw which makes a last minute meal plan work.
 I used some regular taco seasoning to season the shrimp.  I put the shrimp in the zip lock bag and then sprinkle with the seasoning. I put the shrimp in the skillet to cook.
 While the shrimp are cooking you can get the tortillas ready.  I bought these little taco holders on Amazon.  They work really well.
 Another great shortcut is the shredded lettuce you can buy in a bag at the store.  Add the lettuce in the bottom.
 Add tomatoes if you must.
 The shrimp are cooking.  Turn them after a couple of minutes to cook the other side.
 Don't they look really good. Take up.
 Then add the shrimp to the tacos.
 Add some of the chili cream sauce on top.
 I made the sauce earlier in the morning so the flavors had time to blend.
 1 teaspoon chili powder
 1 Tablespoon mayo
 2 Tablespoons sour cream
 1 teaspoon chili sauce
 Juice of one lime
I doubled the recipe so we would have enough.  Stir well, cover, and put in the fridge.
Then drizzle on top of the tacos.  It adds some really nice flavor to the tacos.

Shrimp
Flour tortillas
taco seasoning mix

Chili Cream Sauce
2 Tablespoons sour cream
1 Tablespoon mayo
juice of one lime
1 teaspoon chili sauce
1 teaspoon chili powder

Chocolate Strawberry Parfait

It's strawberry time again.  This is one of my favorite time of the year. The strawberries this year are so good. Big and sweet.  This is an easy quick recipe that spotlights the strawberry.  I actually made half the recipe for the chocolate creme.  So I only made two parfaits.  The recipe I include will be the whole recipe.

This makes a pretty dessert.  Add a strawberry and mint leaf for garnish. 
 What makes this so quick is that it uses a frozen pound cake.  If you have a homemade pound cake sitting around use that but if not the Sara Lee pound cake works really well.
 Start with 4oz (8oz) softened cream cheese and  1/2 (whole) stick softened butter.
 Whip well.  Then add 1/2 (1) teaspoon of vanilla.  Also throw in a dash of salt.
 Then add 1 1/2 (3) cups powdered sugar
 This was interesting.  I needed 1/2 of 1/3 cup of cocoa powder.  So I eyeballed half of my 1/3 cup measuring cup.
 1/2 (1) Tablespoon milk or heavy cream.
 Mix well.  I then added the creme to a pastry bag with a star tip.  You can use any tip actually.
 Put a little of the creme on bottom of the dish.  I used two of my ice tea glasses.
 Then slice a couple of slices of the pound cake.
 Cut into cubes
 Drop that on top of the creme.
 Then add a little more creme.
 Chop up some strawberries.  No need for sprinkling sugar on them either.  This is what took the longest amount of time.  Put as many strawberries as you like in there.
 Add more poundcake cubes.
 Top with the rest of the creme.
 Add some chocolate sprinkles on top and a sliced strawberry. Place in the fridge until ready to eat.
I added the mint leaf when it was time to serve.

8 oz softened cream cheese
1/2 cup softened butter
3 cups powdered sugar
1/3 cup cocoa powder
salt
1 teaspoon vanilla
1 Tablespoon milk or heavy cream

Cheesy Kielbasa, Rice and Broccoli Skillet

Well I didn't make this dish in a skillet but it was still good. This is one of those meals that you can fix on a night when you do not have a lot of time to cook dinner, but you don't want fast food again.  The flavors blend really well together.
A little added cheese on top because you can never have too much cheese.
 A little commentary here.  I used minute rice, I think the recipe wanted long grain rice.  Your choice.
 First thing you want to do is slice the smoked sausage. You can use whatever flavor you like.
 Also slice the onion and bell pepper.  I bought a green pepper, but red would be really good because it would add a little sweetness to the dish.  Red peppers have a really nice flavor and add some nice color to the dish.
 In you skillet or pot brown the sausage.
 When they are nice and golden brown remove from the pan.
 Add a little olive oil to the pot.
 Add the peppers and onions to the pot and cook until they are softened.  Love the smell of peppers and onions. When they are softened, remove from pot too.
 Then add 2 cups chicken broth.  I have a confession to make.  I do not like the smell of chicken broth.
 Add one cup of rice.  Remember I said I used minute rice.  Had I used long grain rice I would have cooked it for about 15 minutes.  But since I realized I used the wrong rice I cooked it for about 7-10 minutes.  After you add the rice, stir well and cover.
 After the rice is cooked, uncover.
 Add the broccoli on top.  I would recommend thawing the broccoli because you only cook it for about 5-7 minutes. Cover the pot.
 After 5-7 minutes add the sausage and peppers and onions back to the pot.
 Add 1 cup cheese.
 Stir well. Let the cheese melt.
Then dish up and add a little more cheese on top.  Enjoy.

1 pkg smoked sausage
1 med onion
1 bell pepper
salt, pepper and garlic
1 cup long grain rice
2 cups chicken broth
2 cups broccoli
2 cups cheese
