Pumpkin Spice Snickerdoodles

I know another pumpkin spice recipe but these cookies are so good. Very soft and airy with just a hint of pumpkin spice. These are very easy to put together and will be a crowd pleaser.

I bet you have everything you need right in your pantry. They are a little taste of fall.

Start with 3/4 cup softened butter

3/4 cup sugar

Mix well.

Add 1 egg that is room temperature.

1 teaspoon vanilla

1/2 teaspoon baking soda

1/2 teaspoon cream of tartar. I think this is what gives these cookies the light airiness texture.

1/2 teaspoon salt

1 teaspoon pumpkin pie spice.

Mix well.

2 cups plain flour. That’s all it takes.

In a smaller bowl add 1/3 cup sugar.

2 teaspoons pumpkin spice. Mix this well.

Set this aside to roll the cookies in.

Make your cookies whatever size you want.

Put in the pumpkin spice mixture and coat.

Place on a parchment lined baking sheet.

Place in a preheated 350 oven and bake for 9-11 minutes. You do not want to over bake. You don’t want to burn the sugar on bottom. It would be better to undercook.

Leave on the cookie sheet to cool for about 5 minutes.

And enjoy on a fall Alabama plate.
