Don't let all the ingredients scare you. They are easy to put together.These are so good and look pretty on the pumpkin plate.
Start with 2 sticks softened butter.
1/2 cup sugar and 1 cup brown sugar. Cream the sugars and butter together until fluffy.
Take 1/2 cup of pecans they can be pieces.
Lightly toast them with just a touch of butter.
Add 2 eggs
1 teaspoons salt
1 teaspoon baking soda
3 teaspoon cinnamon
1 1/2 teaspoon nutmeg
1 1/2 teaspoon ginger
1/2 teaspoon cloves
Pour all of these into the butter mixture and mix until blended well.
Add 1 1/2 cups all purpose flour
2 1/2 cups old fashioned rolled oats.
1 1/2 cups chocolate chips. If you want to save some to put on top you can or just throw them all in the mix,
Finely chop the cooled toasted pecansAdd 2 teaspoons vanilla
Dough with be fairly thick. Chill the dough for 2 hours if you are going to bake. I like to freeze my dough so I make into the balls and put in the freezer. You do not have to chill before doing that.
They do not spread much so you don't have to space them too much on your cookie sheet. Place in a preheated 350 oven. Bake for 8-10 minutes.
Mine are ready for the freezer to be flash frozen. There's always some ready to eat now.

1 1/2 cups all purpose flour
1 teaspoon salt
1 teaspoon baking soda,
3 teaspoons cinnamon
1 1/2 teaspoon nutmeg
1 1/2 teaspoon ginger
1/2 teaspoon cloves
1 cup unsalted softened butter
1 cup brown sugar
1/2 cup sugar
2 eggs
2 1/2 cups old fashioned rolled oats
1/2 cup lightly toasted chopped pecans
1 1/2 cups chocolate chips
Preheat oven 350. Bake for 8-10 minutes. Dough needs to be chilled for at least 2 hours before baking.
