Loaded Cheesy Chicken Noodle Casserole

This is a perfect winter comfort casserole.  There's something so nice about a cheesy noodley casserole on a cold winter night to warm you.  I think you will like this casserole.

Doesn't this look good?  It is also good left over.
Don't all these ingredients scare you, it's really easy to put together.  It uses not one but three kinds of cheese!
Start with a can of cream of chicken soup.  You could use mushroom and I usually do.
1 cup sour cream
1 1/4 cup half and half
Cook 10 slices of bacon.  I bake mine.  You can cook it anyway you like.
Chop and onion
Cook your noodles per the directions.  Cook about one to two minutes less than the directions call for.  Yes you are juggling all these things at one time.
Saute the onions in a little olive oil.
Chop up some cooked chicken.  You can use leftover chicken or rotisserie chicken or cook some yourself.
Drain the noodles
Add the onion to the mixture.
Ad the noodles.
Add about a cup thawed green peas.  I used more than a cup.
Add about 2 oz or as many as you like of the fried onions to the mixture.
Chop up all but two or three pieces of bacon.  Add to the casserole.
Grate 2/3 cup mozzarella cheese, 1/2 cup colby cheese, 1/2 cup parmesan cheese.  You are going to use part of all these inside the casserole. Add as much as you like.
Pour the casserole into a 9x13 pan.
Top with remaining cheese or grate some more. Add the extra bacon too.
Cover tightly.  Place in a preheated 350 oven.  Bake for 30 minutes.
Remove from the oven.  Uncover.
Add the remaining onions on top.  Put back in the oven for about 5-7 minutes.  This casserole can be made ahead of time and you would just bake for a little longer.
Then enjoy.

3 cups chopped cooked chicken
chopped onion
1 can cream of chicken soup
1 cup sour cream
1 1/4 cup half and half
salt, pepper and garlic powder
10 pieces of bacon
1 cup frozen peas
12 oz egg noodles
2/3 cup mozzarella cheese
1/2 cup colby cheese
1/2 cup parmesan cheese
4 oz fried onions
Preheat oven to 350.  Bake covered for 30 minutes.  Uncover, add fried onions put back in oven for 5-7 minutes.
