Fanned Peach Tart

The peach crop this year was really good.  They had so much flavor and were really sweet.  I found this recipe for very easy peach tarts.  I had a couple of peaches that needed to be used and some puff pastry in the freezer and I was ready to go.  Keep puff pastry in the freezer because it really comes in handy for quick and easy dessert.
Add a little powered sugar on top to make it pretty. 
The puff pastry from the freezer, peaches and either apricot or peach preserves.
Follow the directions on the box for how long to leave it out and let it thaw.  Then roll out into a rectangle.
Cut it in four pieces.
Place on a parchment lined baking sheet.
Add some preserves on top of the pastry sheet.
Cut the peach in half. Then thinly slice it but not cutting all the way through at the top.
Fan the peach out a little and place on the preserves.
Fold the sides up.  Place in a preheated 350 oven and bake for 15 minutes.
Warm from the oven.
Sprinkle with powdered sugar.
Then enjoy.

Double the recipe if you would like to make 8 tarts instead of 4.

1 sheet puff pastry
2 peaches
apricot or peach preserves
