Red Velvet Whoopie Pies

It was gameday week again and I had to find something sweet for our lunch.  If it were red velvet that would make it even better.  I received this little cookbook from a lady at church and it had this recipe in it but with a devils food cake mix instead of red velvet.  A little substitution never hurt anyone.


Sometimes I get a little lazy taking my after pictures.  This was not a good showing of how they turned out.
This is all that is needed to make these little sandwich cookies.
Start with a cake mix in the flavor you would like.
1/4 cup softened butter
2 eggs
Now mix that.  The batter is going to be thick.
The mixer didn't work real well.
Now scoop them out.  You want them to be about the same size.  I had a cookie scoop but it broke.
Scoop and round them out and place on a parchment lined cookie sheet.  Place in a preheated 350 oven.  Bake for 7-10 minutes.  Leave on the cookie sheet for about 2 minutes to cool.
Once they are cooled
Make your filling.  1 7oz jar of marshmallow cream.  I fluffed it with the hand mixer.
4 oz softened cream cheese
I added just a little bit of vanilla flavoring
Mix well.
Take one cookie and place some filling inside.  Top with another cookie
Enjoy.  Store in an air tight container in the fridge.

Red Velvet Whoopie Pies Recipe

1 pkg cake mix
1/4 cup butter softened
2 eggs
1 7 oz jar of marshmallow cream
4 oz softened cream cheese

Preheat oven to 350.  Bake for 7-10 minutes.
