Chocolate Eclair Cake


This is such an easy no bake cake recipe.  It is perfect for summer. I have been looking for more no bake recipes like this.  I have some news to share soon that will shed the light on that.  Now for the recipe.

I used low fat milk and cool whip for this recipe.
Start with 3 cups milk
Add 2- 4 serving size pkg French vanilla instant pudding mix
Add the 12 oz container of cool whip to the pudding
Fold the whipped cream.
I missed taking a picture of the first layer of graham crackers on bottom of a 9x13 pan.  The add about half the pudding mixture on top.  Spread to the edges.
Add another layer of graham crackers on top.  You might need to cut them to make them fit
Add the rest of the pudding mixture on top.
Add a final layer of graham crackers on top.
I put the chocolate frosting in the microwave for about 30 seconds so that it was a little more spreadable.  Stir it well.
Then spread across the top of the crackers. Place in the refrigerator for about 4 hours.
Then serve.

Chocolate Eclair Cake Recipe
1 box honey graham crackers
2- 4 serving pkg French vanilla pudding mix
3 cups milk
12 oz cool whip
1 container chocolate frosting
