Dark Chocolate Halloween Chip Cookies

I really enjoyed having those cookies in the freezer during the summer.  So I have put a couple of fall cookies in the freezer lately.  It's nice to be able to bake some fresh cookies when you need or want some.  Today I am sharing the dark chocolate ones. 

These dark chocolate ones remind me of the lumps of coal Christmas cookies I make. 
Sorry for the dark picture.  I was having lighting problems in the kitchen.  Too much sun coming in through the sky lights.
Start with two sticks softened butter.
Add 1 cup sugar and 2/3 cup brown sugar to the butter.  Whip until fluffy.
Add 2 eggs
2 teaspoons vanilla
This recipe calls for the special dark cocoa.
2/3 cup of the Hershey's special dark cocoa powder
1/4 teaspoon salt
1 teaspoon baking soda
2 cups all purpose flour.
Mix well.  That is a rich dark batter.
Add 1/2 cup peanut butter chips
1/2 cup white chocolate chips
1/2 cup mini Reese's Pieces baking candies
1 cup semi sweet chocolate chips.  The recipe calls for the Nestle Halloween baking chips. I had seen them until I needed them.  So I just used regular semi sweet chocolate chips.
That is a chip filled cookie dough.
I scooped them out and put them in the freezer to get firm. 
Then when I need some I got some out.  Baked in a preheated 350 oven for about 8-10 minutes. If you like you could add a few extra chips on top.

Taco Stroganoff

I seem to be playing around with the stroganoff recipes of late.  This one is an interesting twist. 
I thought my bowl plate would be a fun way to eat this dish. 
A little it of everything.
Chop an onion
Saute the onion and brown the ground beef.  Drain.
Add 1/2 cup water
One packet of taco seasoning mix.
Add one can corn drained.
1 8 oz package chive and onion flavored cream cheese
Mix that well until he cream cheese is melted.
Add 1 cup shredded cheese.  I put too much cheese because you know you can never have too much cheese but you can.  It became too thick.
Stir well.
Serve over cooked egg noodles.

Taco Stroganoff Recipe

1 chopped onion
1 lb ground beef
1 pkg taco seasoning
1/2 cup water
1 can drained corn
8 oz chive and onion flavored cream cheese
1 cup shredded cheese
8 oz cooked egg noodles

Slow Roasted Chicken Wings

What would football season be without chicken wings.  I have a good recipe for hot wings so when I found this recipe for roasted wings I thought it would be a nice change of pace.  Of course you need to do a little planning and have plenty of time because it takes like 4 hours to make these wings but it is worth it.
The seasoning on these wings are really good.  It is different from traditional hot wings.  
This is all you need and a little time to make some really flavorful and tender wings.
I decided to mix the seasoning in a zip lock bag.  Start with 1 Tablespoon kosher salt
1 tablespoon black pepper
1 Tablespoon chili powder
1 Tablespoon paprika
1 teaspoon garlic powder
1 teaspoon ground cumin
Shake the bag well to mix.
Dry the thawed wings well.
Add to the bag and shake to coat.
You will need a cookie sheet.  I put a piece of foil in the bottom for ease of cleanup.  The add a rack to the cookie sheet. I sprayed to too so they wouldn't stick.  Not sure if I needed to or not but it made me feel better.  The rack will keep the air moving around the wings so they will get crispy on bottom.
Look at all the seasoning on these wings.  Place in a preheated 250 oven.
After one hour. Rotate the pan in the oven.
After two hours.  Rotate the pan.
After three hours.  Rotate the pan.
After four hours.  Ready to eat.
It was a wings kind of day.  Serve the wings with blue cheese or ranch dressing if you like and celery.
These were so good.  And as you can see very easy.

Slow Roasted Chicken Wings Recipe

3 lbs thawed chicken wings
1 Tablespoon kosher salt
1 Tablespoon black pepper
1 Tablespoon chili powder
1 Tablespoon paprika
1 teaspoon garlic powder
1 teaspoon ground cumin

Preheat oven to 250.  Bake for 4 hours and rotate the pan every hour for even baking.
