Apple Nachos

There really isn't a recipe for this dish.  This is one of those dishes that you can use ingredients that you like and as few or as many as you like as well.  So enjoy and make this dish your own.
I like using one Granny Smith apple and then one sweet apple.  The contrast in flavors are really nice.
I chopped some walnuts.  Walnuts are really nice with apples.  You can use whatever kind of chopped nuts that you have or like.
I also chopped up some maraschino cherries.
Before I cut my apple I put some water into a container and then added some salt.  I read that you can use salt water instead of lemon juice to keep your apples from turning.
I used my apple cutter to slice my apples.  I probably should have made the pieces smaller.
I let them soak until after dinner.
I let them pat dry on a paper towel.
Spread out the apple pieces on a plate.
Drizzle some chocolate sauce over the apples.  This is just Hershey's chocolate sauce.
Then I drizzled some caramel sauce around the apples.  You can use any kinds of sauces that you like.
Sprinkle some walnut pieces on top.
The the cherries.  If you have some whipped cream you can add that as well.  I didn't have any at the time.
The finished nachos.  Just like the chip and cheese kind.  You could use pieces of pears too if you would like.  Have fun with this dish.

Cafe du Grobmyer Easy Beignets

Mardi Gras is right around the corner and if you can't make it to Cafe du Monde then you can make beignets right at your house.  Now the chicory coffee I'm not too sure about.
All you need is a can of biscuits, a deep fryer, and some powdered sugar.
Open the biscuit can and separate the biscuits.
Then pull the biscuit in half.
You will have two pieces for each biscuit.
While your oil is heating up go ahead and split all the biscuits.
When it is hot drop several biscuit pieces in the hot oil.  When one side gets nice and brown flip them.  You don't want to put too many in at one time because you will have to work them.
First one is finished.  Drain on paper towels.
With a small sifter sift some powdered sugar on the beignets.  You will want to get them covered really well.
Then transfer to another plate.
The finished product.  I have been told from a reliable source not to inhale the powdered sugar.

Chocolate Covered Strawberry Cookies

I found these cookies just in time for Valentine's Day.  They are super easy to make and taste great.  So make some for your Valentine this year.
The base of these cookies come from a cake mix.
Empty a strawberry cake mix into a bowl.
Add 1 teaspoon baking powder
Add 2 eggs
Add 1/2 teaspoon vanilla
Add 1/3 c oil
Mix well.  The dough will be very stiff and difficult to mix.
Then add about 1 1/4 cup semi sweet chocolate chips.  Mini chips might work as well.
Mix so the chips are well distributed.
Roll into small balls.  You can add a couple of chips to the top if you need too.  Place in a preheated 350 oven.  Bake for 8-10 minutes but don't over bake.  They won't get real brown.  If you overbake they will become hard.
The finished product.  What Valentine would not enjoy a plate of these?

1 box strawberry cake mix
1 teaspoon baking powder
2 eggs
1/3 cup oil
1/2 teaspoon vanilla
1 1/4 cup semi sweet chocolate chips

Crock Pot Sugared Pecans

I have found another use for your crock pot making sugared pecans.  I made these this weekend and they sure were good.  If you have some extra pecans you need to try this recipe too.
I was surprised to learn that it used powdered sugar instead of regular sugar.
First thing you need to do is turn your crock pot on high and cover it for 15 minutes.
While you are waiting for the crock pot to heat up melt 1/2 cup of butter in a large enough container that you can add the pecans.
The recipe said 16 oz of pecans so I used 2 heaping cups of pecans.
Add the pecans to the butter.
Stir them well to coat the pecans with the butter.
Then add 1/2 cup powdered sugar to the pecans.
Stir well.
In a separate bowl to be used later add 1/4 teaspoon cloves.  I love the smell of cloves.
1/4 teaspoon ground ginger
1 1/2 teaspoon ground cinnamon
Mix them well and set aside.
When the 15 minutes are up put the pecans in the bottom of the crock pot. Cover and cook on high for about 15 minutes.
After the 15 minutes.
Turn the crock pot down to low and uncover the pot.  Cook for 2-3 hours stirring occasionally.
After 1 hour.
After three hours.

Scoop up the pecans and put in a bowl.
Then sift the spices you mixed early on the pecans.  Stir them so that they are evenly coated.
The pecans when they are coated with the spices.
I spread them out and let them dry a little before eating them.

1/2 c melted butter
1/2 c powdered sugar
1/4 teaspoon ground cloves
1 1/2 teaspoons ground cinnamon
