Coconut Oatmeal Pecan Cookies

This latest new cookie is packed full of all kinds of goodness. You could even throw in some dried cranberries or cherries if you want to add a little something more.   

These are still warm from the oven.  I wish you were here to sample them with me. 

Yes I know there looks like a lot of ingredients, but they are easy to make.
Start with 2 sticks softened butter.
Add 1/4 cup brown sugar and 3/4 cup sugar
Whip that until the butter is fluffy. 
Add 2 eggs
1 Tablespoon vanilla
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
I bought this little pinch bowl at the Pioneer Woman's place in Pawhuska this year.  It is just perfect to measure your spices all at one time, then dump into the batter all at one time.  After adding the spices mix everything well. 
Add 1 1/4 cup all purpose flour.  Add a little at a time and scrap down the sides after mixing. 
Add 2 1/2 cups old fashioned oats.  Add them a little at a time.
Add 1 cup unsweetened coconut
1/2 cup finely chopped pecans  Mix this all together well.  Scrap down the sides well. 
These are going in the freezer for later.  To bake them place in a preheated 350 oven and bake for 10-12 minutes. The centers will be soft.  Let them rest on the cookie sheet for about 5 minutes or so. 
These were my test cookies.  I think they pass.  These will be a hit this Christmas.

1 cup softened butter
1/4 cup brown sugar
3/4 cup sugar
2 eggs
1 Tablespoon vanilla
1 1/4 cup all purpose flour
1 teaspoon bakinb soda
1 teaspoon cinnamon
1/2 teaspoon salt
2 1/2 cups old fashioned oats
1 cup unsweetened coconut flakes
1/2 cup pecans

Place in a preheated 350 oven.  Bake for 10-12 minutes.
