I know a second peppermint cookie this year. I could not resist this batch. There is something about chocolate and peppermint together for the holidays. Hope you enjoy the second patch this year.
Once again I forgot to take a picture of the 3/4 cup of softened butter in the mixing bowl. Then add 3/4 cup brown sugar and 1/4 cup sugar. Mix well.
Add a small package of chocolate instant pudding mix. If you can find Devil's food pudding use it if not chocolate will be fine. Pudding makes cookies so good. Try adding a vanilla box to your regular chocolate chip cookies.
Now add 2 eggs. Mix
1 teaspoon baking soda
1 teaspoon vanilla
2 1/4 cup all purpose flour. Add a little at a time and mix after. If you put it all in your mixer you will have flour everywhere. Don't ask how I know.
Add 1 cup Andes Peppermint Crunch Baking Chips
And 1 cup semi sweet chocolate chips or chunks.
I made small bite size cookies and have them ready for the freezer.
Bake in a preheated 350 oven for 8-10 minutes. Another Santa approved cookie.
Chocolate Chunk Peppermint Pudding Cookies
3/4 cup softened butter
3/4 cup brown sugar
1/4 cup sugar
1 small box chocolate instant pudding mix
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
2 1/4 cup all purpose flour
1 cup Andes Peppermint Crunch Baking Chips
1 cup semi sweet chocolate chips or chunks
Preheat oven to 350 and bake for 8-10 minutes.
