This cookie adds another classic Christmas flavor, butterscotch and molasses. You may think of molasses in relation to gingerbread but it is used in some other cookies and adds a really rich flavor.
A perfect blending of flavors in this cookie.
Butterscotch pudding is added to this cookie and it makes them so soft and gooey.Start with 1 stick of softened butter.
3/4 cup brown sugar
1 small box butterscotch pudding mix
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup molasses. Mix all these together until well blended. You want to make sure there are no little chunks of butter left.
Gradually add 2 1/2 cups all purpose flour. Mix well after each addition.
1 cup butterscotch chips. Scoop and bake or scoop and put in the freezer. Before you bake the cookies you can roll in some sugar to add a little crunch on the outside. I did not roll mine before baking and they were fine. So whatever you want to do.
Bake the cookies in a preheated 350 oven. Bake for 7-9 minutes.

1/2 cup softened butter

1 teaspoon baking soda

2 1/2 cups all purpose flour
1 cup butterscotch chips
Preheat oven to 350 bake for 7-9 minutes.
