Baked Parmesan Chicken

Who doesn't like Parmesan Chicken?  This is a simple recipe full of flavor.  Add a vegetable of your choice and you have a perfect meal.  I don't think you will be disappointed.  And yes there is an ingredient you might not be expecting. 
This recipe is like homemade shake and bake if you  want to think of it that way.
Yes that is mayo back there.
Start with 1/2 cup mayo.
Add 1/2 teaspoon seasoning salt
1/2 teaspoon paprika
1/2 teaspoon garlic
Mix that well.  Set aside for a minute.
Then mix 3/4 cup panic
And 1/3 cup grated parmesan cheese.  You can use the stuff in the green can but I don't think you will like it as well as fresh grated.
Now you want to coat the chicken breast in the mayo mixture.  I used my cake offset knife to help spread it on the chicken.  It's not just for cakes.
Now put it in the panko mixture and coat well.
Place in a sprayed baking dish.
Lightly spray the top of the chicken.  This will help brown up the panko.   Place in a preheated 425 oven and bake for 30-35 minutes.  I baked mine a little bit longer because they were thick.  You could cut the chicken into strips if you wanted them to cook quicker.  
Fresh from the oven.  The chicken is moist and golden brown. 
I paired my chicken with a baked sweet potato but any vegetable will go very nicely with this chicken.  

Baked Parmesan Chicken Recipe

4 boneless chicken breast
1/2 cup mayo
1/2 teaspoon seasoning salt
1/2 teaspoon paprika
1/2 teaspoon garlic
Mix these four ingredients together
1/3 cup grated parmesan cheese
3/4 cup panko
Mix these two ingredients
Place in a preheated 425 oven.  Bake for 30-35 minutes.
