Butterscotch Chocolate Chip Cookies

 Here is another new cookie recipe for you.  Santa is going to have a really hard time deciding which one of the 2021 cookies will be his favorite.  This is another classic cookie with classic flavors.

All Santa needs is a glass of milk with these cookies. 

Don't be scared at the number of ingredients here, most are very common and can be found in your pantry. 

(not pictured) Start with 1 stick softened butter and 1/2 cup brown sugar and 1/3 cup sugar.  ( I have had some issues with uploading my pictures and I have noticed some are not getting posted. Sorry about that.  I will try and pay more attention to that.)
After you mix the butter and sugars well add one egg mix well.
Add 2 teaspoons vanilla
Add 1 1/4 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3/4 teaspoon salt
1/4 teaspoon cinnamon.  Mix all this well.  Scrap the sides and mix a little more. 
Now for the good stuff.  3/4 cup semisweet chocolate chips, 1/2 cup butterscotch chips and 1/4 cup chopped pecans. Fold those items in.
Scoop the dough onto a parchment lined baking sheet.  If you are baking right away place in a preheated 350 oven and bake for 10-12 minutes.   Before baking sprinkle with a little flaky sea salt on top of the dough. 

Save some for Santa.

Butterscotch chocolate chip cookies recipe

1 1/4 cup all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3/4 teaspoon salt
1/4 teaspoon cinnamon
1/2 cup softened butter
1/2 cup brown sugar
1/3 cup sugar
2 teaspoon vanilla
1 egg
3/4 cup semisweet chocolate chips
1/2 cup butterscotch chips
1/4 cup chopped pecans

flaky seas salt for sprinkling

Preheat oven to 350 and bake for 10-12 minutes.

Soft and Chewy Pumpkin Oatmeal Cookies


The next in the 2021 holiday cookies.  This one features pumpkin.  I know people think of pumpkin only for Thanksgiving but it is good year round.  With the availability of canned pumpkin you can enjoy it all the time. 
I think Santa will like this cookie selection. 
These cookies use very basic ingredients that you probably have on hand. 
Start with one stick softened butter.
Add 1/2 cup brown sugar and 1/4 cup sugar.  Mix well. 
Add 1 egg yolk.  Bring you eggs to room temperature before using them in your baking. 
1 teaspoon vanilla.  Mix well.
Add 1 teaspoon pumpkin pie spice. 
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt.  Mix these spices into the butter mixture. 
Add 1 1/2 cups old fashioned oats.  Mix well.  Not pictured somehow but also add 1 cup all purpose flour.
1/3 cup pumpkin puree.
Using paper towels or a clean dish cloth squeeze the excess moisture out of the pumpkin. It can get messy.  Mix well.
Scoop your cookies onto a parchment lined cookie sheet.  Preheat oven to 350.  Bake for 9-12 minutes.

1/2 teaspoon cinnamon
1/2 teaspoon baking soda

1 stick softened butter
1/2 cup brown sugar
1/4 cup sugar

1 teaspoon vanilla
1/3 cup pumpkin puree.  Squeeze out the excess moisture.
1 1/2 cups old fashioned oats.

Preheat oven to 350.  Bake for 9-12 minutes.

Pistachio Pudding Cookies

 Another in the 2021 new cookie for Santa list.  Pistachios seem to be very popular right now.  I have seen several recipes using them so I decided to try them in a Christmas cookie.  These are very good.  The pudding keeps them nice and soft. I think you will enjoy them. 

A little extra green food coloring brightens them up a little. 
This is a very basic cookie base. 

Start with 3/4 cup sugar
3/4 cup brown sugar
3/4 cup softened butter.  Mix those well until they are nice and fluffy. 
While that is getting all nice and fluffy you can chop your pistachios.  You will need 1 1/2 cups shelled chopped unsalted pistachios. 
1 Tablespoon vanilla
1 egg at room temperature.  Mix all that together.
Then add 1 3/4 cup all purpose flour.  Add a little at a time and mix well after each addition. 
Then add the 3 oz package pistachio instant pudding mix.  This will add a little more pistachio flavor but also make the cookies stay nice and soft. 
2 teaspoon baking powder
1/2 teaspoon salt.  Mix those in. 
Add the pistachios to the mix. 
The dough will be thick so you might have to fold it in by hand.
Cookies are scooped and ready for the freezer.  When ready preheat the oven to 375 and bake for 9-11 minutes.  You do not want to over bake these cookies.

Pistachio Pudding Cookie Recipe

3/4 cup softened butter
3/4 cup sugar
3/4 cup brown sugar
1 Tablespoon vanilla
1 egg
1 3/4 cup all purpose flour
1 3 oz package pistachio instant pudding mix
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups shelled chopped pistachios
green food coloring

Preheat oven to 375.  Bake for 9-11 minutes.

White Chocolate Cherry Cookies

Another new cookie!! It gets hard finding new cookie recipes.  There are several things I look for, are they freezable, have I made these before, and will they go well with other holiday cookies.  Before I go to far, I know a lot of people don't care for maraschino cherries but you really need to try these cookies. 

I think Santa would approve of these cookies. 
Normally you think of dark chocolate with cherries and I might try that some time but this recipe uses white chocolate. 
While you are putting everything together drain your cherries.  For some reason this jar had stems.  So if yours have stems please remove them.
Start with 2 sticks softened butter.  I use unsalted butter in my baking.  If you have salted butter don't add as much salt.
1/2 cup sugar and 1/4 cup brown sugar.  Mix well with the butter.  You want it nice and fluffy. 
Add 1 room temperature egg
1 1/2 teaspoon almond extract.  Almond goes really well with cherries. 
2 cups all purpose flour
1/2 teaspoon salt
1 1/2 teaspoon baking soda
Take your well drained cherries and chop them.  I use the food processor.  Work smarter not harder. 
2 cups good quality white chocolate chips.  I like Ghirardelli chips.  
Scoop up those cookies.  If you are going to bake preheat your oven to 375 and bake for 8-10 minutes.  Let cool on your baking sheet fro 3-4 minutes. 
Save some for Santa.

White Chocolate Cherry Cookies Recipe

1 cup softened butter
1/2 cup sugar
1/4 cup brown sugar
1 egg
1 1/2 teaspoon almond extract
1 1/2 teaspoons baking soda
1/2 teaspoon salt
2 cups all purpose flour
1 10 oz jar maraschino cherries drained and chopped
2 cups white chocolate chips

Preheat oven to 375.  Bake for 8-10 minutes.
