I found this new snack mix that is tailor made for fall. Everyone's favorite flavor; pumpkin spice. I know pumpkin spice can be over used but this is a great snack mix. My husband that isn't a big PS fan enjoyed it and said he didn't realize it was pumpkin spice. I don't know if that is because he doesn't eat a lot of PS so he really doesn't know what it taste like or the cinnamon over takes it. Either way it is being enjoyed. It was a good consolation prize after we lost our football game yesterday.
There's a lot of good things in this mix. I will share some things I would do differently next time too.A couple of cereals are the basis for this mix.
Take your biggest bowl. This is my multipurpose, mix anything bowl.
Measure out 4 cups of pumpkin Cheerios.
And measure out 4 cups of cinnamon Chex cereal.
Put both cereals in the bowl. I hand tossed them to mix them up.
Now add 2 cups pretzels. These are butter pretzels.
1 1/2 cups sliced almonds. I would recommend using the sliced or even slithered almonds.
1 1/2 cups pecans. The recipe called for chopped pecans. I used pecan halves because I like the bigger pieces of these. I was afraid the smaller pieces would get lost.
Hand toss all of these items.
Now add 1 1/2 cups mini marshmallows. I was surprised they went in before you bake. But they wanted toasted marshmallows.
1/2 cup white chocolate chips. Same thing they want them to melt a little.
Hand toss all of this.
Toss a little more. You want them all mixed up.
Now take 1 Tablespoon cinnamon. Sprinkle this over the mix. I tossed as I sprinkled. You could see the marshmallows getting coated.
Now take 1 Tablespoon pumpkin spice and sprinkle it over the mix. Toss and mix.
Now this is where I would do thing differently next time. Do what is easier for you. The recipe says to spread it out in a parchment lined baking sheet. I couldn't get all of it in one baking sheet so I used a second smaller one. Spread it out evenly. I would leave it in the big bowl. You will put it on the baking sheet in a minute.
Now for the sauce. Melt 4 Tablespoons butter.
All melted in the microwave. I let it cool just a little bit.
I sprayed my measuring cup first.
Measure out 1/2 cup honey
1/3 cup maple syrup.
Now whisk up all three items in a bowl.
The recipe calls for drizzling the mixture over the mix on the baking sheet. I would drizzle in the bowl and toss and coat. I think it would not pool in the bottom of the pan and would coat the mix better.
All drizzled on top. Place in a preheated 350 oven. Bake for 15 minutes. Watch the marshmallows.
When they start to toast it is done.
Right out of the oven.
Let it cool for about 5 minutes. I think it needs to cool longer.
Then break apart and put in a bowl.
The corners got a little dark. I think if it had been tossed in the bowl it might not do this.
Now it is in the bowl and ready to enjoy.
Pumpkin Spice Chex Mix Recipe
4 cups pumpkin Cheerios
4 cups cinnamon Chex cereal
2 cups pretzels
1 1/2 cups sliced almonds
1 1/2 cups pecans
1 1/2 cups mini marshmallows
1/2 cup white chocolate chips
1 Tablespoon cinnamon
1 Tablespoon pumpkin spice
1/2 cup honey
1/3 cup maple syrup
4 Tablespoons melted butter
Preheat oven to 350. Bake 15 minutes. Let cool.
