Strawberry Shortcake Cookies

I know I know another strawberry recipe.  These are so easy and very tasty.  So make some and fill up the cookie jar with them.

There is not much you need to make these.  The only thing beside the strawberries you might not have on hand would be heavy cream.

Start with 2 cup plain flour.

1 teaspoon baking powder

1/4 teaspoon salt

1/4 cup sugar

Finely chop 6 oz of strawberries.  You want to have this done before you cut in the butter.

Cut 3 Tablespoons of butter into chunks.

Then cut the butter into the flour mixture.

Until there are no large pieces of butter.

1/3 cup + 1Tablespoon of heavy cream

Now add the chopped strawberries. Mix well but try not to smush the strawberries too much.

Scoop the cookies up on a parchment lined cookie sheet.  Place in a preheated 350 oven.  Bake for 20 minutes until golden brown.

These cookies are a hit.

6 oz fresh strawberries
1 cup all purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1/4 cup sugar
3 Tablespoons butter cold
1/3 cup + 1Tablespoon cold heavy cream
You can add some sanding sugar of top if you like

Preheat oven to 350 Bake for 20 minutes.
