Kentucky "Run for the Roses" Derby Pie

Saturday is the Kentucky Derby and that is something I have always wanted to attend.  Of course I haven't found the perfect hat yet so I am waiting until I do.  You might not can attend this year's Derby but you can eat like you are there.  This is a very easy pie to make whether it is Derby weekend or not.

The recipe calls for regular pie crust but I think the deep dish might be better.  Mine overflowed.
Measure out 1 cup chocolate chips.  The recipe didn't say what kind so I used milk chocolate.
Spread them out in the bottom of a frozen pie crust.
Melt one stick of unsalted butter.  Let it cool for a few minutes.
In a bowl add 1 cup sugar
2/3 cup flour
1 cup finely chopped pecans.  I learned I can't cook, take pictures and talk on the phone all at the same time because I forget to take pictures.
Now add in the cooled melted butter.
Mix well.  It will be thick.
Add 2 eggs
1 teaspoon of vanilla
Mix well and then pour on top of the chips.
Smooth it around on top to try and even it out. Place in a preheated 325 oven for 1 hour.
Fresh from the oven.  It cooked over the edges.  It tasted pretty good though.
Look at all that chocolate.  You can top it with a little whipped cream if you like.

Derby Pie Recipe
1 regular frozen pie crust
1/2 cup unsalted butter melted
1 cup sugar
2 eggs
1 teaspoon vanilla
2/3 cup flour
1 cup finely chopped pecans
1 cup chocolate chips

Preheat oven to 325.  Bake for 1 hour.

  1. Made 2 of these last night to bring to work today.....then my boys asked me to make another one for home this weekend. It's been a staple for us for many years. My recipe differs slightly from yours: only 6 Tbls flour (scant 1/4 cup), which gives the pie a softer consistency, and my recipe calls for walnuts, but I interchange them with pecans from time to time (whatever is on hand - diners' preference - etc). Also, I mix it all together in a different sequence and just pour into the pie shell. Regardless, this is a crowd pleaser!

    1. oh...I also use semi-sweet chips and, generally, substitute bourbon for the vanilla;)
