Honey Lime Grilled Chicken

This was the last of the new recipes for Championship Monday.  We wanted some grilled chicken but something a little different.  I found this marinade and had the ingredients. (Isn't that half the battle of picking out a recipe) But to make it a little different I made the chicken into kabobs.  Who doesn't like kabobs?  I think you will like this recipe too.  The flavors say summer but we grill all the time so it was perfect.
I had some fresh pineapple that I put on the grill too.
The cayenne gives it a little bit of heat to balance the honey.  Don't be afraid it isn't too hot.
One reason I like to make marinades is that you can make them in zip lock bags and then throw them away for easy cleanup.  It also lets you moosh the meat with the ingredients.  Start with 1 teaspoon black pepper
 1 teaspoon kosher salt
 1/2 teaspoon cayenne
 2 Tablespoon honey
 zest of 2 limes
Then the juice of 2 limes.  So no waste there.
Here is the nice fresh juice
 1/4 cup olive oil
Now the chicken breast.  If you want to do whole breast then add to the bag.  These are some of Fresh Market's boneless, skinless Tuesday 2.99 special chicken breast.
Since I wanted kabobs, I cut them into pieces.  Not to big so they won't cook, but not too small to burn.
Add to the marinade. You can let the chicken soak in the marinade for up to 24 hours in the fridge.
I made the kabobs a little bit before putting on the grill. I added onions and peppers.
I didn't get pictures on the grill because you have seen it all before. And there was a game coming on soon.
Here is our Championship Monday meal.  I think championships were earned all the way around.

Red Velvet 7 Layer Bars

These delicious bars were the special treat that helped us bring home another National Championship Monday night. You know I had to find something red velvet to make for the game.  I have been wanting to try these for a while now so no time like the present.  I think you will enjoy them too.
The thing about magic bars is they get better the longer they sit.  These turned out really good.
I forgot the pecans again. That is what happens when they are in the freezer.
Start with 1 softened stick of butter
 One egg
 3/4 cup sugar.  Beat well
 1/2 teaspoon vanilla
 1/2 teaspoon baking powder
 1/8 teaspoon salt
 1 Tablespoon cocoa powder
 1 Tablespoon red food coloring
1 1/4 cup all purpose flour.  Mix well.
Line a 9x13 baking dish with parchment paper.  I have never done this before, so I decided to try it this time.
So spread the crust in the bottom of the pan.  It's not as easy as it might seem.  The dough is very sticky. Place in a preheated 350 oven.  Bake for 8 minutes.  It will not be cooked all the way just set.
Now you are ready to put the good stuff on top.
Start with 1 1/3 cup coconut
 Sprinkle on top
1 cup semi sweet chocolate chips
 1/2 cup white chips
 Sprinkle both on top.
 1 cup coarsely chopped pecans
The pour a can of sweetened condensed milk all over the top.
I probably should have spread it out some more. Place back in the 350 oven and bake for 25 minutes.
Straight from the oven.  Do not cut yet.  The longer it sits the easier it will cut.
Using the parchment paper lining life the bars out of the pan to cut.
Cut and serve.

New Ranch Dip

Wow what a game last night.  I hope you were able to watch it.  We had lots of goodies to nibble on during the stressful times of the game.  This dip is very easy to make.  Make it the day ahead so all those flavors can meld together.  I think you could find lots of uses for this dip.
You can serve this with any of your favorite veggies.  I also had some pita chips and they where good with it too. I hate that the carrots were orange last night.
That is fresh parmesan cheese.  You could use the green can kind but fresh is always best.
I started by cooking my bacon. The recipe actually called for bacon bits, but I thought fresh bacon would be so much better.
 1/2 cup sour cream
 1/4 cup mayo
 1/2 cup Ranch dressing
 1/4 cup Parm cheese
 Mix well.
When the bacon is done, let it cool a little bit.
 Then chop it.
Add to the dip.  Mix well.  You could also add a green onion if you have it.
Then serve with your pretty vegetables.
