Another really good pumpkin cookie recipe. These just scream fall.
Start with 1/4 cup white sugar and 1/2 cup brown sugar
Melt 1 stick of butter, add both sugars to the butter.
Add 1/2 cup pumpkin puree
Add 1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon kosher salt
1 teaspoon baking soda
2 teaspoon baking powder
1 cup quick cook oats
1 cup all purpose flour
1/2 cup white chocolate chips.
Mix well.
Scoop cookies out onto a parchment lined cookie sheet.
Place cookies in a preheated 350 oven and bake for 14-16 minutes.
Fresh from the oven. They smell so good.

Loaded Baked Potato Grilled Cheese Sandwich
I love to find new ways to make grilled cheese sandwiches. Grill cheese sandwiches are my go to lunch when there isn't anything else in the house. I like experimenting with different kinds of cheeses and think I like provolone and mozzarella cheese best. Forget those Kraft singles. This sandwich would probably be better if I had potato bread but it was pretty good on my Mt White bread.
Might be a little more labor intensive than you would like for lunch but so worth it.
Cook a couple of pieces of bacon in the microwave.
Spray one side of the bread with butter.
Turn it over and add a thin layer of sour cream on the inside piece of bread. Don't add too much because it will get soggy. Nothing worse than a soggy sandwich.
Add shredded cheese. This is a mix of colby monterey jack cheese.
Chop a green onion.
Chop the cooked bacon.
Add that on top of the cheese.
Top with another piece of bread that has a thin layer of sour cream on the inside. Then spray the outside with butter.
Place in a skillet on medium heat. You don't want it too hot because the outside with toast and the cheese won't be melted. The recipe calls for cooking in a panini press, but I don't have one, yet.
Cut and serve. Taste just like a loaded baked potato. The green onions really make this sandwich.

Spinach Artichoke Flatbread Pizzas
I was looking for something a little different for our game day eats and when I found this recipe I thought it might fit the bill. It just so happened that Publix had their pizza dough on sale this weekend too so that worked out well too. I think looking back if I could have gotten the crust rolled thinner it would have been better. But this was a nice alternative to regular pizzas.
This recipe uses fresh spinach instead of frozen. Not sure if frozen would be as good if you can't find fresh.
Melt 2 Tablespoons butter over medium heat in a skillet.
Add about 1/2 teaspoon crushed red pepper flakes. Add more or less depending on how you like heat. Also add 2 cloves garlic minced. I use the minced jar garlic.
Add 2 Tablespoons flour.
Add 1 1/2 cups skim milk. Stir or whisk well.
While the sauce is cooking, wilt the spinach. Place the spinach in a pot over medium high heat. Cover and cook until wilted.
Add 1/4 teaspoon salt to sauce.
Add 1/4 cup parmesan cheese
The spinach is nice and wilted. You don't want to cook it too long or it will stick to the bottom.
Add the spinach to the sauce.
Stir well.
Roll out your dough. You can use flatbread crust if you can find them. Use a pizza stone if you have it as well.
I swapped to the stone. Place the stone in the oven while it is preheating before using. Add some of the spinach sauce on top.
Spread it around to the edges.
Chop one can of artichoke hearts.
Sprinkle half on top of the spinach.
Top with cheese. I used an Italian blend but mozzarella would be good too. Place in a preheated 475 oven and bake for about 10 minutes. Check it might need a little more time. You want the cheese melted well and the crust cooked.
Fresh from the oven. As it baked it slid off the crust a little.
Slice and enjoy. Nice change of pace from the regular pizzas.

Pumpkin Chocolate Chip Cookies
One of the nice things about fall is the pumpkin recipes that come out. I was looking for a "fallish" cookie to take to a Harvest dinner last weekend. I found this easy recipe. The added chocolate chips I thought might help sell the pumpkin. Can you believe there are people out there that does not like pumpkin? These are very good and have the soft consistency of a muffin. Give them a try this fall, I think you will like them.
This recipe calls for pumpkin pie spice. If you don't have any at home you can make your own. I will include the recipe at the bottom of the post for you.
In a small bowl add 1 cup pumpkin. You can use canned or homemade.

Add 1/2 cup canola oil
Whisk the oil and pumpkin together.
Add 1/2 cup white sugar
1/2 cup brown sugar. Mix the pumpkin with the sugars.

1/2 teaspoon salt

Then mix 1 teaspoon milk with 1 teaspoon baking soda. Mix until the baking soda has dissolved.
Add that to the dry ingredients.
1 Tablespoon vanilla
Add the pumpkin mixture into the dry ingredients.
Mix well.
Add 2 cups mini chocolate chips
Mix well. Look at all those chips.
Use a scoop and scoop out the dough onto a parchment lined cookie sheet.
They are ready for the oven. Place in a preheated 350 oven. Bake for 10 minutes.
