Honey Mustard Pretzel Chicken

This is a great recipe and whether I make the chicken part of it a lot or not I know I will make the honey mustard sauce again.  This sauce would be great to have on hand.
This recipe doesn't have many ingredients and I would suggest you keep them on hand to make this sauce any time you have chicken fingers.
Put about 4 cups of pretzels in the food processor to chop.  I didn't really measure them.
You want some smaller pieces of the prezel in the breading so don't pulverize them.
Place on a shallow plate.
Now for the dressing.  1/2 cup olive oil.  I use the light tasting.
1/2 cup Dijon mustard
1/3 cup honey
1/4 cup water
3 Tablespoons red wine vinegar
Place all the ingredients in the food processor
Pulse.
Pour about half in a bowl.
I sliced the chicken into smaller pieces.
Dip to coat in the mustard sauce.
Then place in the pretzels.
Place on a foil lined cookie sheet.  Spray the foil. I didn't and they stuck a little. Place in a preheated 400 oven.  Bake for 20-25 minutes.  Let sit for 5 minutes.
Well I don't know what happened to the pictures of the chicken when it came out of the oven.  They seem to have disappeared.

4 cups pretzels coarsely crushed
1/2 cup olive oil
1/2 cup Dijon mustard
1/3 cup honey
1/4 cup water
3 Tablespoons red wine vinegar
salt and pepper
boneless skinless chicken breast.

Banana Sticky Buns

I have had this recipe since my high school home ec class.  That has been a while.  I will pull it out every now and then when I have some bananas that need to be used and I don't really want banana nut bread.  This is a nice change of pace.  They are good for a snack and also for breakfast.
The base for this recipe is Bisquick.  I use the heart smart kind and it works just fine.
Start out with a muffin tin that has been sprayed.  Add 2 teaspoons of brown sugar in each cup.
All the cups have brown sugar in them.
Then add 2 teaspoons of butter to each cup.  On reflection I think it probably would be better to put the butter in first.  I really don't measure the butter just cut off a slice and put it in.
They all have butter.
Then add three pecan halves.  If you had rather put chopped pecans that will be fine too.
Once all the cups have pecans in them place the tin in the oven so the butter melts and mixes with the brown sugar.  Preheat the oven to 450.
In a bowl mix 2 cups bisquick.
Then mash the bananas.  The recipe calls for 2/3 cup of mashed bananas.  I used the three bananas I had and probably added too many.  The dough was a little sticky.
Mash the bananas really well.
Don't let the tin stay in the oven too long.  Just long enough to melt the butter.
Save your banana peels to put on your roses.  They like them.
Dump the bananas in the Bisquick. I think it's a little too much bananas.
Mix until all the dry Bisquick is incorporated.
Turn out on a floured counter.  Like I said this was a little sticky.
Roll out into a rectangle.
Have 2Tablespoons of butter softened.
Spread the butter on the dough.
Then sprinkle 1/4 cup of brown sugar on top of the butter.
Spread it around.
Then start on one side and start rolling the dough.
Get it all rolled up.  Mark off the roll to make sure you can get 12 cuts on it.
Cut and place in the tin on top of the brown sugar mixture.  Mine do not look very pretty but I guess it is the taste that matters.
Once the tin is full place in the preheated 450 oven for about 10 minutes.
When the rolls are finished cooking immediately invert onto a baking sheet.
The finished rolls.  Had I put the butter first then the brown sugar I think there would have been more of the caramel drizzled down the side.

1/2 cup soft butter
2 cup Bisquick
36 pecan halves
2/3 cup mashed banana
2 Tablespoons butter
1/4 cup brown sugar

Cheesy Broccoli and Bacon Pasta Bake

I must have been really tired or half awake or something when I found this recipe because I thought it was chicken, broccoli pasta bake.  I was almost sure that this recipe had chicken in it so I thawed my chicken and had all the other ingredients that I need to make this.  When I pulled out the recipe and read through it there was no chicken included.  I planned on this being our meal for dinner.  So, what to do? You adjust.  I thought about adding cooked chicken to the pasta but wasn't sure there was enough liquid in it for it to taste right.  The next option was to cook some chicken to go along with this side dish.  That worked.  I might in the future try and make some adjustments to it so that chicken can be added.
I used fresh parsley I cut from my garden today.
I took three pieces of bacon and cut it into pieces.
Cooked it in the skillet until nice and brown.
 Cook 2 cups pasta per instructions on box.  The recipe calls for ziti pasta but I found the cute twisted pasta and used that.
Finish cooking the bacon.  Drain the bacon on a towel but save the drippings in the pan.
Chop a medium size onion and some fresh parsley.
I moved to a larger pot for the rest of this recipe.  Add about 1 Tablespoon of the bacon drippings.
Add the onion and parsley to the pot to cook in the drippings.
You want to soften the onion a little.
Add 1 Tablespoon all purpose flour to the onions and stir.
Add 1 1/2 cups 2 % milk.
Make sure the flour is mixed well with the onions.
Add the milk and stir.
Stir until the mixture thickens a little bit.
Add 1 cup of fresh broccoli. Cut the broccoli into bite size pieces.
Cook for 2-3 minutes until it softens a little.  Next time I might cook the broccoli in the last couple of minutes of the pasta.
Add the pasta, and mix well.
Add about 1 cup shredded mozzarella cheese.
Stir until the cheese is melted.
Pour the pasta into a greased baking dish. I probably could have used a slightly larger dish.
Added the crumbed bacon on top.
Sprinkle with 1 Tablespoon of panko. Place in a preheated 350 oven.  Bake for about 10-15 minutes or until it is bubbly and panko is browned.
Fresh from the oven.
It makes a nice side dish with the chicken.
