Pickled red onions are all the rage right now. They are in all the magazines and on all the cooking shows. Who would have thought. They are using them with everything, bbq, sandwiches, and tacos. I thought I would try my hand at making them and they were very easy.
They will last in a sealed container for several weeks in the fridge. They get better the longer they sit.
You probably have everything but maybe the red onion in your pantry.1 cup white vinegar
3 Tablespoons sugar
1 1/2 Tablespoon salt
1/2 teaspoon peppercorns
You can also add garlic to the mixture. Bring the mixture to a boil and stir to dissolve the sugar and salt.
Thinly slice a red onionAdd the onions to a bowl.
Add the garlic.
Pour the boiling mixture on top of the onions.
Stir to make sure they are covered in the vinegar. Press the onion down into the vinegar too.
I put something on top to keep the onions from floating to the top. Let cool to room temperature.
Aren't they pretty.
Place in a container that needs to be glass, ceramic or plastic that will not react with the vinegar. Place in the fridge.

1 1/2 cups sliced red onions
1 clove garlic
3 Tablespoons sugar
1 1/2 Tablespoons salt
1/2 teaspoon peppercorns
1 cup white vinegar
