Easter Funfetti Cupcakes

 My quilt group meets this week and we have a birthday and Easter this week so I wanted to make a special treat to take. I have made similar cupcakes in the past but I made chocolate cupcakes so it would look like dirt under the grass. This year I didn’t want to do chocolate cupcakes, we have a couple of ladies that are allergic to chocolate. Terrible I know. So these funfetti cupcakes are like little east eggs hidden in the cupcake. You don’t have to wait for Easter to make them they will make any occasion festive.


Decorated with cute little Peeps and eggs. I know there are some people that don’t like Peeps but they are on a toothpick so easy to pull out.


Very simple ingredients.

The recipe calls for sifting 1 1/2 cups plain flour. I don’t normally shift my flour but it is baking so I tried it to see if it makes a tender cake.

Add 1 1/2teaspoons baking powder to the sifter of flour.


Add 1/4 teaspoon of salt in the sifter too.


The dry ingredients sifted.


In another bowl add 2/3 cup sugar.


Add 2 eggs to the sugar.Beat until fluffy and a light yellow color.

Melt 3/4 cup butter. I put it in the microwave and barely melted it because I didn’t want it to be hot.


Add 2 teaspoons of vanilla to the egg mixture.

The melted butter.

Add to the wet mixture. Mix well.

Measure 1/2 cup of milk. Alternate adding milk and dry ingredients to the bowl. Mix and scrape the sides between each mixing.
First part of the flour mixture added and mixed.


All mixed up and ready for sprinkles.

Fold in 1/4 cup of sprinkles to the batter. You can use any kind of sprinkles you want.

I preheated the oven to 350 while I put the batter in the cupcake tins. The recipe said it would make 24 Cupcakes. I don’t know if I put in too much batter or my cupcake tins are larger but I only had 15. Keep that in mind if you use this recipe. I found cute Easter cupcake liners to use. Put the pans in the oven for about 15-16 minutes.


Out of the oven and cooling before I ice them.

Funfetti Cupcake Recipe

1 1/2 cup plain flour 

1 1/2 teaspoon baking powder

1/4 teaspoon salt

2 eggs 

2/3 cup sugar

3/4 cup melted butter

2 teaspoons vanilla

1/2 Cup milk

1/4 cup sprinkles

Preheat oven to 350 Bake 15-16 minutes


Buttercream frosting


Very simple buttercream 



Start with 2 sticks softened butter


Since I already had the sifter out and my powdered sugar had lumps I sifted 3 1/2 cups powdered sugar.


Add 2 teaspoons vanilla to butter.


Add a pinch of salt


Mix well. The butter will be fluffy and a light yellow color.


Alternate between 1 teaspoon milk or heavy cream either will work and the powdered sugar. Mix well.


About halfway through I add the green gel coloring so it will be mixed well.


Mixing well.


Frosting is read.


Load your piping bag and put your favorite tip on and you are ready to frost the cupcakes.


Cupcakes frosted now it is time to decorate them.

Buttercream Frosting Recipe

1 cup softened butter

3 1/2 cup powdered sugar

2 teaspoons vanilla

1 teaspoon milk or heavy cream

Pinch of salt

Gel food coloring

Cherries in the Snow

 Yes I’m back with a recipe finally. This is the best little recipe. It’s light and airy. You can make it ahead of time. You can even change it up and make it blueberries in the snow if you must or any other fruit flavor. It’s great for a pot luck or a family gathering. Whatever you do try it soon.


Isn’t it pretty.

I used the reduced fat versions of the ingredients to help out a little bit.


Start with a softened 8 oz brick of cream cheese.


Add 1/2 cup of milk and 1/2 of powdered sugar.


Mix those items well. Make sure there are no cream cheese lumps.


Now fold in 12 oz thawed whipped cream. Now one little tub is 8 oz. I had to run to the store to get some more so keep that in mind.


It’s all folded in now.


The recipe calls for 9 inch round angel food cake. I use to see and buy the round angel food cakes. I couldn’t find one. I found the loafs at Walmart so I bought two to have enough cake. Cut the cake into cubes.


Add the cubes to the mixture and stir them well.


Pour it into a 9x 13 baking dish. This one is a little oversized. I used it to make sure I had enough room.


Then spread two cans of cherry pie filling on the top and spread it out. Put it in the fridge at least for a couple hours if not overnight.

Cherries in the Snow Recipe

1 9 inch angel food cake

8 oz softened cream cheese

1/2 cup powdered sugar

1/2 cup milk

12 oz cool whip

2 cans cherry pie filling

Traveling with the Grobmyers March 8, 2024 Day 10.

 This is our last day on the island. We packed and loaded up the car for some last minute sight seeing. 

We had not been by the King Kamehameha Statue or the Iolani Palace yet, so we drove by there for the photo op.





After those stops we did a little research and found out that Tua and Marcus Mariota’s high school was not far away. They both attended the private St Louis High School.



Very nice high school.

Then we ventured to the NorthShore for lunch. Joe found The Smoking Boar & the Coconut. It was definitely a local spot.

Our next trek starts best with this map. The right side of this map is where we drove on Thursday to the end of the road. Today we drove to the end of the road in the left. We didn’t realize how close we were on Thursday. There is a hiking trail around he tip of the island but no road or plans for one to complete the circle. It was really pretty. The water was such pretty shades of blue. The wind was crazy.

There was a small private airport/runway where planes would fly up and push you out of the plane to hang glide back down to earth.we saw a few returning to earth while we were out. With the wind so strong I was surprised they were flying.


We saw two wild boars roaming around a YMCA camp.

We made our way back to the airport. We had a 7:00 pm flight home.we had a very good time by we are ready to come home.

When we got home we were greeted by a few cherry blossom blooms and buds ready to burst open. I am really glad I did not miss my cherry blossoms.
