Well it is suppose to be fall. The calendar says fall. The pumpkins, gourds and Indian corn says it is fall. So would someone please tell the thermometer that it is fall. We have had a record dry heat wave this fall. Today is November 1st and it is suppose to be in the high 80's. Come on already. The stores have sweaters and coats in the stores but they should have swim suits and shorts. Well one thing we can do to make it feel like fall is make some fall foods. Not soups or chilis but things using pumpkin or apples. Today I am sharing a very easy pumpkin cake recipe. If you need to take a dish somewhere but don't have a lot of time to make something this is for you. It will also remind you of pumpkin pie.
Just like pumpkin pie you have to have a little dash of whipped cream on top.
This cake is so easy. Keep an angel food cake mix in you pantry for occasions like this. You can use other pie fillings with the cake mix as well. I'll tell you more about that in a few minutes.Start with your cake mix. Add 2 teaspoons of pumpkin pie spice
1 can of pumpkin. Not pumpkin pie filling. Just plain ole pumpkin.
Add 1 cup water
Mix well. You will see the bubbles and it will expand a little.
Pour it into a 9x13 cake pan. This one is just a little larger than 9x13. Place in a preheated 350 and bake for about 30 minutes. Check it after 30.
Remove from oven and let cool.
Then serve with a dollop of whipped cream. Doesn't get much easier than that.
Pumpkin Angel Food Cake Recipe
1 box angel food cake mix
1 15 oz can pumpkin
2 teaspoon pumpkin pie spice
1 cup water
Place in a preheated 350 oven for about 30 minutes.
Sorry I forgot to tell you about using other pie fillings with the angel food cake mix. Pick your favorite pie filling, mine is cherry, and mix with the angel food cake mix. Place in a 9x13 pan and bake at 350 for 30 minutes.
