We have enjoyed grilling chicken this summer so tonight we swapped to pork chops. It didn't let us down. This is an easy recipe and the chops do not have to marinate long in the rib so if you are not sure what you want to fix in the morning you can do this in the afternoon.
Some roasted okra and fresh corn on the cob rounded out this great meal.
This is a two step process. There is a rub that you put on when you put them on the grill and then a sauce to baste the chops in when they are done on the grill.
I picked up this basket the other day so I can "shop" in my pantry. Makes gathering everything up easier.Salt and pepper the chops.
I am making the basting sauce first. 2 Tablespoons spicy mustard
4 teaspoons honey
Mix that well and set aside.
Now for the rub. 1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 th teaspoon paprika
1/8th teaspoon cinnamon
1/8 teaspoon cayenne
Mix that well
Sprinkle on one side
Lightly mist with olive oil. And then do the other side.
Place on the grill.
Turn
When they are about done...
It is time to baste the chops with the honey mustard
Just leave it on there long enough for the sauce to caramelize on the chops.

2 Tablespoons spicy mustard

Rub recipe
