This dip was so good. It wasn't tart like you would think it might be but wasn't too sweet either. It tasted a lot like cherries to me too. I made this for our open house. The bright red color looked so festive on the table.
Doesn't that just say Christmas?
It is very easy to put together.
Rinse and look your cranberries.
Put them into a baking dish.
Add 1 cup of sugar to the cranberries.
Stir them around a little.
Cover and place in a preheated 350 oven for about 30 minutes. You want the cranberries to pop and release their juice.
Take them out of the oven and stir them.
Add 1 cup pineapple preserves and stir until well combined.
It is a good combination, cranberry and pineapple.
After it has cooled put it into a airtight container and refrigerate overnight.
When you are ready to serve, place softened cream cheese in the bottom of a dish.
Top with the cranberry mixture.
Serve with vanilla wafers or gingerbread men. It's good on both.
