Mississippi Mud Cookies

If you like Mississippi Mud brownies you are going to love the cookies. These are really good.  They take a little time to make but worth all the time.
These are the ingredients for the cookie part.
Start with 2 sticks butter softened
1 cup brown sugar
1 cup sugar
2 teaspoons vanilla
Mix well until fluffy.
Add two eggs
2 1/4 cups all purpose flour.  Mix well after each cup.
1 teaspoon baking soda
Pinch of salt.
1/2 cup unsweetened cocoa powder
You might use something to mix the cocoa a little before you turn on the mixer to keep from getting cocoa all over the kitchen.  You would think I would know this by now.
You have a nice dough.
Drop dough by tablespoonfuls onto a parchment lined cookie sheet.  Place in a preheated 375 oven.  Bake for 9 minutes.
While the cookies are baking rough chop some pecans.
After 9 minutes take the cookies out.
Add some miniature marshmallows to the top.  The cookies are warm so they should stay put. Put them back in the oven for about a minute and a half.
Take them out.
Add some chopped pecans on top.  Press them into the marshmallows. Let them cool on the tray for about 5 minutes.
These are the ingredients for the icing.
In a saucepan place 1 stick of butter.
1/3 cup milk
6 Tablespoons cocoa
While the butter is melting, measure out 3 1/2 cups powdered sugar
Add 1 teaspoon vanilla to the sugar
Whisk the butter cocoa mixture until it is melted.
Add it to the sugar
Mix well.
Pour on top of the marshmallows and pecans.
Drizzle it around on top.
Enjoy.  Share or save them all for yourself :)

1/2 cup butter
1/3 cup milk
6 Tablespoons cocoa
3 1/2 cups powdered sugar
1 teaspoon vanilla

Preheat oven 375.  Bake cookies 9 minutes.  Top with marshmallows bake 1 1/2 minutes.

Zucchini Parmesan Crisps

There are so many good recipes using zucchini it is a good thing that there is always so much of it during the summer.  This was a really good recipe.  I might try using some yellow squash with this recipe next time I make it.
I used fresh Parm cheese but you could probably use the green bottle kind as well.
Measure out 1/2 cup all purpose flour in a bowl.
Break and beat two eggs in another bowl.
In a third bowl add 1 cup Panko.
Add 1/2 cup Parmesan cheese
 Toss the Panko and Parm cheese.
Slice two zucchinis
Dredge the zucchini in the flour
Then coat in the egg
Then press the Panko/cheese mixture onto the zucchini
Heat some oil in a skillet and place the zucchini in the skillet.
Turning as they get brown.
Drain on a paper towel
Some good zucchini there.

1/2 cup oil
1 cup Panko
1/2 cup Parmesan cheese
2 zucchinis sliced
1/2 cup all purpose flour
2 eggs beaten

No Bake Strawberry Banana Pudding Twinkies Cake

A very long name for a really good cake.  This is my second Twinkie cake and I was very nervous last year when they quite making them.  I was very happy when production started again.  Pick up some and try this cake this summer for your next cookout.
I used 2% milk, sugar free pudding and lite cool whip.  You have to cut back somewhere.
Line the bottom of a 9x13 pan.  My pan is a little bit bigger.  I needed to make a bigger one.
Measure 1 cup heavy cream.
Add 1 cup milk
1 teaspoon vanilla
Add the pudding mix and whisk well.
Get all the lumps out of it.
Pour over the top of the Twinkies.
Make sure they are all covered.
Wash and slice strawberries.
Toss with 2 Tablespoons powdered sugar
Stir well.
Then layer the cut strawberries on top of the pudding.
Add the cool whip on top of the strawberries.  Make sure you smooth it out all the way to the edges.
Chop up another 2 cups of strawberries.
Sprinkle on top.  Cover and refrigerate for at least 3 hours before serving.
When you cut into the cake people will ask "is that Twinkies in there!"

No Bake Strawberry Banan Pudding Twinkie Cake Recipe
10 Twinkies
4 cups whipped cream
2 cups strawberries diced
2 cups strawberries sliced
1 small box Jello banana cream pudding mix
1 cup heavy cream
1 cup milk
2 Tablespoons confectioners sugar
1 teaspoon vanilla

Walmart has strawberry cream Twinkies.  I didn't see them when I was buying the Twinkies for this cake.  I think they would be good to use in this cake.  Publix had banana cream Twinkies.  If you really like banana you might want to try those.
