This recipe is a nice change of pace especially on a cold winter's night. You can change it up and make it your own. Add lots of extras can be added on top.
I didn't have tomatoes or lettuce but that can be added on top.Next time I think I will use the big Fritos instead of the small ones. I think it will be easier to eat.
First thing to do is chop an onion and saute it in a skillet with a little olive oil.
While that is cooking mix up your seasonings. 2 Tablespoons chili powder
1 teaspoon salt
1/2 teaspoon cumin
1 teaspoon sugar. Set aside.
Add the ground beef to the onions and cook. When brown drain the grease off.
I'm sure I have commented on how I don't like tomatoes. I don't mind cooking with them but I don't want big pieces. This is one can of Rotel tomatoes. I put it in the food processor and pureed it. Add it to the ground beef.
Add one can undrained kidney beans.
Now add the seasonings you mixed up.
Add 1 5.5 oz can tomato paste.
Mix all that up. Turn heat down to medium low and simmer for about 20 minutes or so.
It has thickened up and is ready to eat.
Place some Fritos on a plate.
Add some of the meat mixture on top.
Add some cheese. If you want tomatoes, lettuce and sour cream that would be good too.
