A couple of weeks ago I was looking for a sweets recipe to make something to take to a get together. I found this recipe. But the recipe said they were giant cookies and I needed something that would go farther. But the recipe stayed in the back of my mind. I made them but I did not make them as big as the recipe called for. The really reminded me of the breakfast cookies that I have made. They are full of all kinds of good things. You could probably change out some things if you do like dried cherries.
These were so good and they smell wonderful.
Yes there are a lot of ingredients in this recipe but it is so worth it.Start with 1 stick of softened butter.
1/2 cup brown sugar
1/4 cup sugar. Whip the sugars and butter until nice and fluffy.
1 egg
1 Tablespoon molasses
1 teaspoon cinnamon
2 teaspoon cornstarch
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup all purpose flour
1 1/2 cups old fashioned oats. Mix well. The dough will be thick.
1/2 cup dark chocolate chips
3/4 cups dried cherries. I gave these a rough chop.
1/2 cup walnuts. I gave these a rough chop too.
Then scoop out on a parchment lined baking sheet. I never know when I bake new cookie recipes if they are going to spread or not. That is one of the reasons I had them spaced out. These did not spread out. So you can put them a little closer together. Place in a preheated 350 oven. Bake for 15 minutes.
After 15 minutes take them out of the oven.
Press down the tops. Put them back in the oven for another 3-5 minutes.
Then take out and let cool for a few minutes before removing them from the cookie sheet.
Then enjoy. These cookies have lots of flavors going on in them.
Chewy Oatmeal cherry Chocolate Chip Cookies Recipe
1/2 cup softened butter
