I was in the mood to try some different scone recipes again this year. Last year I discovered them getting ready for the Olympics. Scones are nice because they are not real sweet and they are easy to make. There's a wide variety of recipes for them too.
Three kinds of chocolate make these so yummy.
Start with 2/3 cup cream or milk. I used milk because that is what I had.
1 egg lightly beaten.
1 teaspoon vanilla
Mix well and set aside.
In another bowl add 1 3/4 cups all purpose flour
1/4 cup Dutch processed unsweetened cocoa powder
1/2 cup sugar
2 1/2 teaspoon baking powder
1/4 teaspoon salt
Mix that together well.
Cut in 1/3 cup cold unsalted butter. Cut it into pieces before you add it.
Using a pastry cutter cut the butter into the flour mixture.
Add the liquid ingredients to the dry.
Add 1/3 cup white chocolate chips and 1/3 cup dark chocolate chips. I guess I did not get a picture of that. Pat out on a floured surface and cut out. Place on a parchment lined cookie sheet and place in a preheated 375 oven. Bake for about 15- 20 minutes. If you make yours thinner you will want to cook them less time.
Fresh from the oven. You can serve with the Devonshire cream that I posted last year.
