Butterscotch Molasses Pudding Cookies

 This cookie adds another classic Christmas flavor, butterscotch and molasses.  You may think of molasses in relation to gingerbread but it is used in some other cookies and adds a really rich flavor.

A perfect blending of flavors in this cookie.

Butterscotch pudding is added to this cookie and it makes them so soft and gooey.
Start with 1 stick of softened butter.
3/4 cup brown sugar
1 small box butterscotch pudding mix
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/3 cup molasses.  Mix all these together until well blended.  You want to make sure there are no little chunks of butter left.
Gradually add 2 1/2 cups all purpose flour.  Mix well after each addition.
1 cup butterscotch chips.  Scoop and bake or scoop and put in the freezer. Before you bake the cookies you can roll in some sugar to add a little crunch on the outside.  I did not roll mine before baking and they were fine.  So whatever you want to do.
Bake the cookies in a preheated 350 oven.  Bake for 7-9 minutes.

Butterscotch Molasses Pudding Cookie Recipes

1/2 cup softened butter
3/4 cup brown sugar
1/3 cup molasses
1 small box butterscotch instant pudding
2 eggs
1 teaspoon vailla
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 1/2 cups all purpose flour
1 cup butterscotch chips

Preheat oven to 350 bake for 7-9 minutes.




Chocolaty Peanut Butter Cookies

 What is better than chocolate and peanut butter together?  I don't know of much.  These cookies are a perfect blend of both flavors.  Santa asked for seconds.

These cookies are the perfect bite.

I bet you have everything in your pantry right now to make these delicious cookies.
Start with 2 softened sticks of butter.  I always use unsalted butter when I am baking.  You usually add additional salt so you don't want too much in your cookies.
3/4 cup brown sugar
3/4 cup sugar.  Whip the butter and sugars.
Add 1 cup crunchy peanut butter
2 eggs
1 teaspoon baking powder and 1 teaspoon of the unpictured baking soda
1/2 teaspoon sea salt
1 1/2 teaspoon vanilla
Mix well.  
Add 2 1/2 cups all purpose flour.  Add a little at a time and mix well between.
Add two bags of mini chocolate chips.  Scoop up onto your baking sheet.


Bake in a preheated 350 oven for 12-15 minutes. 

Chocolaty Peanut Butter Cookie Recipe

1 cup softened butter 
1 cup crunchy peanut butter
3/4 cup brown sugar
3/4 cup sugar
2 eggs
1 1/2 teaspoon vanilla
2 1/2 cup all purpose flour
1 teaspoon baking power
1 teaspoon baking soda
1/2 teaspoon sea salt
2 12 oz bags mini chocolate chips
Preheat oven to 350.  Bake for 12-15 minutes.






Chocolate Chunk Peppermint Pudding Cookies

 I know a second peppermint cookie this year.  I could not resist this batch.  There is something about chocolate and peppermint together for the holidays.  Hope you enjoy the second patch this year.


These are the perfect little bite of chocolate and peppermint. I think Santa would approve.

The peppermint crunch baking chips I found at Publix. 
Once again I forgot to take a picture of the 3/4 cup of softened butter in the mixing bowl.  Then add 3/4 cup brown sugar and 1/4 cup sugar.  Mix well.
Add a small package of chocolate instant pudding mix.  If you can find Devil's food pudding use it if not chocolate will be fine. Pudding makes cookies so good.  Try adding a vanilla box to your regular chocolate chip cookies.
Now add 2 eggs.  Mix
1 teaspoon baking soda
1 teaspoon vanilla
2 1/4 cup all purpose flour.  Add a little at a time and mix after.  If you put it all in your mixer you will have flour everywhere.  Don't ask how I know.
Add 1 cup Andes Peppermint Crunch Baking Chips
And 1 cup semi sweet chocolate chips or chunks.
I made small bite size cookies and have them ready for the freezer.
Bake in a preheated 350 oven for 8-10 minutes. Another Santa approved cookie.

Chocolate Chunk Peppermint Pudding Cookies
3/4 cup softened butter
3/4 cup brown sugar
1/4 cup sugar
1 small box chocolate instant pudding mix
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
2 1/4 cup all purpose flour
1 cup Andes Peppermint Crunch Baking Chips
1 cup semi sweet chocolate chips or chunks
Preheat oven to 350 and bake for 8-10 minutes.


Mint Chocolate Fudge Cookies

 It's time to start that holiday baking.  I spend a large part of the year gathering cookie recipes and then in October I start looking through them and decide what I want to make for the coming holiday season.  Gingerbread men are always on the menu so never fear.  I hope you like this year's offerings.

These baked up beautifully.  They smell wonderful.  Do not over-bake them.
You can find the mint chocolate fudge baking chips at Walmart.
I can tell I'm a little rusty.  I forgot to take a picture of the three sticks of softened butter in the mixing bowl.  Then add 1 1/4 cups sugar.  Whip well.  
Then add 1 1/4 cups brown sugar and continue the whipping. 
Add two large eggs.  Take your eggs out a little before starting the baking process to get them to room temp.  They will beat better.
Add 1 Tablespoon yes Tablespoon vanilla.  I like to use vanilla paste in my Christmas cookies to add those little flecks of vanilla.
2 teaspoons baking soda.
1 teaspoon sea salt.  Mix all these well.
Add 4 cups all purpose flour.  Add one cup at a time and mix well between each cup.
                                   

This is a thick dough.  

                                               

Take 2 cups whole almonds. 

                                             

Put them in a food processor and grind into fine pieces.  You don't want it too fine or too chunky, just right.

                                               

Add to mixer and mix well.  The dough will be very thick.     Add the two bags of mint chocolate fudge baking chips.  This dough is so thick.

                                               

This is the cookies dipped up and ready for the freezer.

Bake the cookies in a preheated 350 oven for 12-15 minutes.  I would aim for the 12 minute range.  You do not want to over bake then.

Mint chocolate fudge cookie recipe

1 1/2 cup softened butter
1 1/4 cup sugar
1 1/4 cup brown sugar
1 Tablespoon vanilla
2 teaspoons baking soda
1 teaspoon sea salt
4 cups all purpose flour
2 10 oz pkg mint chocolate fudge baking cips
2 cups finely chopped almonds
2 large eggs

Preheat oven to 350.  Bake 12-15 minutes
