Cheddar Bay Biscuits Chicken Pot Pie


This is probably the best new recipe I have tried in a long time.  With that said it was also the most labor intensive as well.  But boy was it well worth it. This combines the best of two recipes, chicken pot pie and Red Lobster biscuits. This recipe made enough for us to have two meals on it.  So I can say that it reheats well too.
There are a lot of ingredients but they are a lot of good veggies in it as well.
Start by dicing up some carrots. About 3-4 medium carrots.
Dice about 1 1/2 cups potatoes.  If you use new baby potatoes you do not have to peel them.  I had large potatoes so I had to peel and chop.
Place the carrots and potatoes in a pot and add water to cover them about half an inch.  Heat over high heat until it comes to a boil.  Reduce the heat cover and let simmer for 8 to 10 minutes, until just fork tender.
3/4 cup frozen green peas
3/4 cups whole kernel frozen corn
Put in a bowl with the chopped 3 cups cooked chicken.
When the carrots and potatoes are cooked, drain them well.
Put the chicken, corn, and peas in the bottom of a large 9x13 baking dish that has been lightly sprayed.
Put the carrots and potatoes on top of the chicken.
Take 2 Tablespoons of butter and melt in the pot you cooked the carrots/potatoes in.
Add 1 cup diced onions to the butter.
Once the onions are tender add 2/3 cup al purpose flour.
1 teaspoon salt.  I put all of these things together with the flour before I added it to the pot.
1/2 teaspoon pepper
1/2 teaspoon celery seed
Measure out 1 cup milk
Add 5 Tablespoons butter to the pot with the onions, melt.
Add the flour and the seasonings.
Stir well.
Add 2 cups chicken broth.

Whisk well until the sauce starts to thicken.
Pour one the veggies and chicken mixture.
Place in a preheated 400 oven.  Bake for 20 minutes.
This is what is needed for the topping.  Mix the biscuits while the casserole is baking.
Grate 1 1/2 cups sharp cheddar cheese

2 Tablespoons butter melted
Add 1 teaspoon dried parsley to the melted butter
1/2 teaspoon garlic salt to the butter.
Add 2/3 cup milk to 2 cups bisquick
Add cheese and stir until all the ingredients are no longer dry.
Take the casserole dish out of the oven.
Drop the biscuits on top.
Until the top is covered.  Place back in the oven and bake for 10 minutes.
Take out of the oven.
Brush the tops of the biscuits with the butter mixture.
Now put back in the oven for about 5 minutes.
Remove from the oven.  Let set for a few minutes.
Then dig in.  I know there were a lot of steps to this recipe but it is well worth it.

Cheddar Bay biscuits Chicken Pot Pie Recipe

3 cups cooked chicken
3/4 cup frozen peas
3/4 cup frozen corn
1 1/2 cups diced potatoes
3-4 carrots peeled and chopped
8 Tablespoons butter divided
1 cup diced onion
2/3 cup all purpose flour
1/2 teaspoon celery seed
1 teaspoon salt
1/2 teaspoon pepper
2 cups chicken broth
1 cup milk

Cheddar Bay Biscuits
2 cups Bisquick
1/2 teaspoon garlic powder
1 1/2 cup shredded cheddar cheese
2/3 cup milk
2 Tablespoons butter melted
1 teaspoon dried parsley
1/2 teaspoon garlic salt

Preheat oven 400.  Bake 20 minutes.  Put biscuits on top bake 10 minutes.  Brush with butter and put back in oven for 5 minutes.
